OBJETIVO: Verificar se o uso do laser de InGaAlP com comprimento de onda de 685 nm pode reduzir a incidência de xerostomia, gravidade da mucosite oral e da dor associada à mucosite em pacientes portadores de câncer de cabeça e pescoço submetidos a radioterapia. MATERIAIS E MÉTODOS: Sessenta pacientes portadores de carcinoma de cabeça e pescoço foram submetidos a radioterapia com dose diária de 1,8 a 2,0 Gy e dose final de 45 a 72 Gy. O volume salivar foi medido nos dias um, 15, ao final do tratamento e após 15 e 30 dias, e a mucosite oral em avaliações semanais. Vinte e nove pacientes se submeteram a radioterapia sem laser e 31 foram submetidos a radioterapia e laser com dose diária de 2 joules/cm² em pontos pré-determinados da mucosa oral e glândulas parótida e submandibular. RESULTADOS: No grupo submetido a radioterapia e laser, a incidência de mucosite (F < 0,001) e dor (F < 0,016) foram significativamente menores e o volume salivar se manteve maior (F < 0,001) durante e após o tratamento. CON-CLUSÃO: Os pacientes submetidos à associação de radioterapia e laser tiveram menor incidência de xerostomia, mucosite oral e dor quando comparados ao grupo de radioterapia sem laser, com resultados com significância estatística. OBJECTIVE: To verify if the use of InGaAIP laser with 685 nm wave length can reduce the xerostomy incidence, the oral mucositis severity and the pain related to mucositis in patients with head and neck cancer submitted to radiotherapy. MATERIALS AND METHODS: Sixty patients presenting head and neck carcinoma were submitted to radiotherapy with daily doses of 1.8 to 2.0 Gy and a final dose of 45 to 72 Gy. The salivary volume was evaluated in the first and fifteenth days, at the end of the treatment and after 15 and 30 days. The oral mucositis was evaluated on a weekly basis. Twenty-nine patients were submitted to radiotherapy without laser and 31 were submitted to radiotherapy and laser with daily doses of 2 joules/ cm² in predetermined areas of the oral mucosa and the parotid and submandibular glands. RESULTS: In the group submitted to radiotherapy and laser the incidence of mucositis (F < 0.001) and pain (F < 0.016) was significantly lower and the salivary volume (F < 0.001) was kept higher during and after the treatment. CONCLUSION: The group of patients submitted to radiotherapy and laser had lower incidence of xerostomy, oral mucositis and pain when compared to the group treated with radioteraphy without laser, producing statistically significant results. The aim of this study was to prepare enzymatic hydrolysates from whey protein concentrate with a nutritionally adequate peptide profile and the ability to inhibit angiotensin-converting enzyme (ACE) activity. The effects of the type of enzyme used (pancreatin or papain), the enzyme:substrate ratio (E:S ratio=0.5:100, 1:100, 2:100 and 3:100) and the use of ultrafiltration (UF) were investigated. The fractionation of peptides was performed by size-exclusion-HPLC, and the quantification of the components of the chromatographic fractions was carried out by a rapid Corrected Fraction Area method. The ACE inhibitory activity (ACE-IA) was determined by Reverse Phase-HPLC. All parameters tested affected both the peptide profile and the ACE-IA. The best peptide profile was achieved for the hydrolysates obtained with papain, whereas pancreatin was more advantageous in terms of ACE-IA. The beneficial effect of using a lower E:S ratio on the peptide profile and ACE-IA was observed for both enzymes depending on the conditions used to prepare the hydrolysates. The beneficial effect of not using UF on the peptide profile was observed in some cases for pancreatin and papain. However, the absence of UF yielded greater ACE-IA only when using papain.

Os grãos de cereais constituem uma fonte valiosa de proteínas para a alimentação humana. No Brasil, os cereais mais importantes, econômica e nutricionalmente, são o trigo, o milho e o arroz (SGARBIERI, 1996). O arroz é uma das maiores produções de grãos no mundo, sendo o Brasil o principal produtor entre os países ocidentais (BARATA, 2005).O arroz pode ser utilizado para consumo humano sob diversas formas: arroz polido, parboilizado e integral; óleo e farinha comercial de arroz, entre outros. Grande parte do arroz polido é consumida diretamente após cozido, mas uma parte significativamente crescente tem sido usada industrialmente na produção de farinha de arroz que é, posteriormente, utilizada como aditivo em gel, pudins, sorvetes e outros produtos similares devido às suas propriedades nutricionais, sua hipoalergenicidade, por possuir sabor agradável e por não interferir na cor do produto final (BRASIL, 1978;CHRASTIL, 1992;JU;RATH, 2001;DAIGLE, 2000).O conteúdo de proteína na farinha comercial de arroz é relativamente baixo (7 a 9%). Entretanto, dentre os componentes do arroz, as proteínas têm sido consideradas de grande valor, pois são hipoalergênicas, particularmente saudáveis para o consumo humano e altamente nutritivas em relação aos outros cereais. O conteúdo de lisina é de 3 a 4%, aproximadamente 50% maior que o do trigo, por exemplo (JU; HETTIARACHCHY; RATH, 2001; SHIH; DAIGLE, 2000).As proteínas são classificadas na base de solubilidade em albuminas (solúveis em água), globulinas (solúveis em soluções salinas), prolaminas (solúveis em álcool) e glutelinas (solúveis em álcalis). A fração das glutelinas corresponde à maior parte das proteínas do arroz, o que representa cerca de 80% ( HAMADA, 1997;JU;RATH, 2001;JULIANO, 2006;SGARBIERI, 1996).A produção de isolados protéicos de arroz consiste, geralmente, em uma extração alcalina de seus subprodutos, como a farinha comercial de arroz, seguida pela precipitação das proteí-nas pelo ajuste do pH no ponto isoelétrico. RESUMO. Considerando-se a importância do feijão na dieta do brasileiro e, ainda, que este alimento não é permitido na alimentação de fenilcetonúricos, é fundamental promover a extração de suas proteínas, visando à posterior remoção de fenilalanina. ABSTRACT. Optimization of enzymatic protein extraction from beans.Considering the importance of beans in the Brazilian diet and the fact that it is forbidden in phenylketonuric feeding, it is relevant to promote the extraction of its proteins, for phenylalanine removal. Aiming for the optimization of protein extraction from beans, two enzymatic methods were initially employed. For the one that produced the highest protein extract yield (PEY), a study was conducted to assess de effect of several parameters, such as centrifugation velocity, reaction time, initial pH and type of enzyme (one of Bacillus licheniformis, two of Bacillus subtilis, one of Aspergillus sojae and one of Papaya carica). The results showed that the best method was the one that employed a concentration of raw material of 1:10 (w v -1 ), initial pH of 10.5, temperature of 50°C, in the absence of ultraturrax treatment. With regard to the parameters tested, the largest PEY (93.1%) was obtained by using the enzyme from Bacillus licheniformis, the centrifugation velocity of 10,640 x g, the reaction time of 3h and initial pH of 10.5.
