O leite é um alimento de alto valor nutricional e, ao mesmo tempo, é um excelente meio para o crescimento de microrganismos, que podem ser patogênicos e prejudiciais para o homem, ou deteriorar o produto. Embora o tratamento em Ultra Alta Temperatura (UHT ou UAT) seja aplicado para garantir a segurança microbiológica e aumentar a vida útil do produto, a literatura referente à avaliação microbiológica de leites UHT traz relatos de falhas do processo. O objetivo deste trabalho foi averiguar a qualidade microbiológica de leites UHT comercializados no município de Ouro Preto – MG, por meio da contagem de bactérias mesófilas, psicrotróficas, termófilas e de esporos mesófilos aeróbios. Foi utilizado o método convencional para detecção de cada um desses microrganismos de acordo com as orientações da Instrução Normativa nº 62 do Ministério da Agricultura e Pecuária. O resultado das análises demonstrou que as amostras de leites UHT, em sua maioria, não apresentaram microrganismos indicadores de deficiências no processo ou de qualidade da matéria-prima.
