Sucos naturais com hortaliças vêm ganhando grande espaço entre os consumidores das grandes cidades pela praticidade e benefícios à saúde. Considerando o exposto, o presente trabalho objetivou avaliar a qualidade microbiológica dos sucos verdes comercializados em lanchonetes localizadas na região central de Belo Horizonte-MG além de analisar as boas práticas de fabricação nestes estabelecimentos. Para tanto foram coletadas 10 amostras de sucos verdes, sendo realizada a análise de Salmonella sp. e Coliformes à 45°C. Foi elaborado e aplicado um checklist para avaliação das boas práticas de fabricação. Os resultados demonstraram que 100% das amostras se apresentavam de acordo com os limites de tolerância para Coliformes a 45°C, cujos valores variaram entre <3 e 2,3x10. O resultado da análise de Salmonella sp. também demonstrou ausência em 100% das amostras, entretanto, o checklist não apresentou resultados satisfatórios. O percentual de adequação por estabelecimento variou de 4,55% a 14,67% enquanto o percentual de adequação por categoria variou de 0% para manipuladores e processos de produção a 19,1% para instalações. Conclui-se que são necessárias novas pesquisas para verificar a qualidade microbiológica destes produtos, a constante fiscalização dos estabelecimentos e a adequação às normas exigidas pela agência nacional de vigilância sanitária.
