ÖzTarhana; genellikle Anadolu, Orta Doğu ve Balkanlar'da tüketilen ve Türk toplumunun beslenmesinde önemli bir yere sahip olan geleneksel fermente bir üründür. Ülkemizin birçok bölgesinde farklı üretim tekniklerine sahip olan tarhana genel olarak; yoğurt, buğday ürünü (dövme, un, irmik), ekmek mayası (Saccharomyces cerevisiae), çeşitli sebze ve baharatların karıştırılmasının ardından, Lactobacillus bulgaricus ve Streptococcus thermophilus tarafından gerçekleştirilen 1-7 günlük fermantasyon sürecine bırakılması, güneşte kurutulması ve sonrasında plakalar halinde kırılmasıyla elde edilmektedir. Asidik, ekşi bir tada sahip olan bu ürün önemli bir protein ve vitamin kaynağıdır. İçerdiği probiyotikler, prebiyotikler ve sindirilemeyen karbonhidratlar gibi fizyolojik öğeler sebebiyle fonksiyonel gıda olarak tanımlanabilmektedir.Eskiden sadece evlerde üretilen tarhanaların son yıllarda endüstriyel olarak üretimi de yaygınlaşmıştır. Bilindiği gibi tarhana genellikle toz ya da sıkım şeklinde üretilmektedir. Kahramanmaraş'ta bunlardan farklı olarak plakalar halinde tarhana cipsi üretimi de yapılmaktadır. Bu bölgede endüstriyel boyutta üretimi yapılan tarhana cipsi, Türkiye'ye ve ihraç edilen ülkelere sağlıklı bir alternatif olarak tanıtılmaktadır. Geleneksel üretimden farklı olarak endüstriyel boyutta tarhana cipsi; düşük sıcaklıklarda, mikrodalga destekli kurutma fırınlarında nemi uzaklaştırılarak veya cam seralarda güneşin etkisi ile kurutularak, yağ ve tuz kullanılmadan ve kızartılmadan üretilmektedir. Tarhana which is made differently in different regions of our country is generally produced by mixing of yogurt, wheat product (dövme, flour, semolina), bread yeast (Saccharomyces cerevisiae), various vegetables and spices, by fermentation which is carried out by Lactobacillus bulgaricus and Streptococcus thermophilus and takes 1-7 days, by drying with sun effect and by shaped as plates . This product which has acidic and sour tastes is an important source of protein and vitamin. It could be defined as a functional product because of its physiological substances contents such as probiotics, prebiotics and indigestible carbohydrates.Previously, tarhana was only obtained by domestically at homes and nowadays the industrial production of it has become common.As it is known, tarhana is generally produced as powder or balls-shaped. Unlike these shapes there is a production of tarhana which is plate-shaped in Kahramanmaras.
