RESUME :Les légumes traditionnels constituent une source importante de nutriments pour les ménages des pays en développement. La présente étude s'est intéressée à la diversité, à la disponibilité, et aux modes de consommation des légumes traditionnels africains dans des localités à diverses activités de maraîchage au Burkina Faso. Des enquêtes de consommation alimentaire ont été réalisées auprès de 400 ménages dans quatre localités: Ouagadougou, Loumbila, Koubri et Kongoussi. Quatre principaux légumes sont retrouvés en toute saison dans les différentes localités : l'oseille (Hibiscus sabdariffa), la corète (Corchorus olitorius), l'amarante leaves were available all the yearlong. The frequency of consumption was once a week for more than 50% of households in the areas of low market gardening activity in Ouagadougou, Loumbila and Koubri. In Kongoussi, more than 45% of households consumed okra (Abelmoschus callei), jute mallow (Corchorus olitorius) leaves, sorrel (Hibiscus sabdariffa) leaves and bean (Vigna unguiculata) leaves more than once a week. The market was the source of supply for 71% of surveyed households. The season, the socio-cultural origin and dietary habits were the main factors influencing the choice of vegetables. Freshness was the main preference index for vegetables. As regards the use of vegetables in the households, 74.25% of households washed vegetables two to three times and finely sliced them just at the time of cooking. Three main modes of consumption mentioned were sauce, soup and stew. Sauce was the main consumption mode and cooking was preceded by boiling as reported by 97.25% of the households. Nearly 62.50%, 53.33% and 45.22% of households, respectively in Koubri, Loumbila and Ouagadougou started vegetable preparation by whitewashing and discarding the residual liquid afterwards. In Ouagadougou and Kongoussi, respectively 66.67% and 33.65% of households conducting whitewashing were non-natives. The nutritional significance and the antioxidant effect of the vegetables were confirmed by nearly 87% of respondents. The study concludes that the market gardening activity positively influences the availability, diversity and frequency of vegetables consumption in households. However, sensitization sessions on postharvest practices and vegetable processing procedures are necessary to better take advantage of the nutrition facts.
