Summary -The kinetics of release of the glycosylated and carbohydrate-free forms of caseinomacropeptide (CMP) was studied in renneted rawand UHT (140 oC for 10 s) milks. The new chromatographic method utilized allowed quantitative determinations of both molecular torrns. UHT treatment leads to a 40% decrease of the final content in glycosylated forms compared to the value determined in raw milk. The results obtained show that carbohydrate-free ic-casein constitutes 52% of whole x-cassin. When milk is UHT treated,~-Iactoglobulin only seems to influence the release of the glycosylated form. Nevertheless, no conclusion can be drawn concerning the localization in the micellar structure of both molecular forms of x-caseln.
(Reçu le 4 janvier 1991; accepté le 29 mars 1991) Résumé -Les effets d'une large gamme de traitements thermiques (70 oC -1 min à 160 oC -0,1 s) sur la dénaturation des protéines solubles du lait et sur les conséquences de cette dénaturation sur les deux phases de la coagulation par la présure ont été étudiés. Le suivi de la libération du caséinomacropeptide (CM Pt) à l'aide d'une nouvelle méthodologie chromatographique a permis de confirmer et de préciser la diminution de la vitesse initiale d'hydrolyse et de la teneur finale en CMPt, en fonction de l'intensité des traitements thermiques. Ces observations, jointes à celles réalisées sur les cinétiques de formation et de raffermissement du gel présure, sont en bonne concordance avec l'hypothèse avancée récemment par plusieurs auteurs à propos du rôle primordial des mécanismes électrochimiques dans la formation de ce gel. Si la concentration par ultrafiltration des laits chauffés ne modifie pas la phase primaire de l'action de la présure, il semblerait qu'elle conduise à l'abaissement du potentiel électronégatif des micelles, ce qui a pour conséquence de rétablir partiellement l'aptitude à la coagulation des laits UHT.
