Agabi) 1 Fès, l'une des deux capitales historiques du Maroc avec Marrakech (sans oublier Meknès et Rabat), s'élève dans la partie nord-ouest de la riche plaine du Saïs, non loin du confluent de l'oues Fès et du Sebou. Fès est situé au point d'intersection des deux grands axes de communications déterminés par le relief : un axe nord-sud Méditerranée-Sahara (ou plus précisément Détroit de Gibraltar-Tafilalet) et un axe estouest qui joint les plaines atlantiques au Maghreb central. A ces conditions géopolitiques favorables s'ajoute un don d'une richesse capitale en pays maghrébin : une eau abondante. Très tôt, le cours de l'oued Fès, qui traverse la vieille ville, fut canalisé, domestiqué, contraint à activer des moulins à eau et divisé en d'innombrables séguias qui arrosent cultures maraîchères, vergers et jardins d'agrément. Les limons et argiles des fleuves et surtout les carrières toutes proches fournirent, dès l'origine, de bons matériaux de construction : briques, moellons et dalles. Les forêts du Moyen Atlas, à faible distance, livrèrent leurs bois de cèdre et de chêne que les médersa mérinides utilisèrent avec tant de bonheur.
