Healthy diets have been demonstrated to complement benefits of physical activity, physical condition and mental wellbeing, all of them being important factors influencing the quality of life of elderly. Unfortunately malnutrition is a serious threat and an increasingly prevalent condition among the fast-growing elderly population. The present work addresses the identification of important factors contributing to decreased appetite and food intake as well as the development of approaches towards a healthy diet and personalised nutrition in elderly. Within the present study semi-structured interviews with elderly and elderly suffering from swallowing and mastication difficulties have been performed, results being used for the development of food provision modules and the corresponding recipes addressing the nutritional requirements of elderly. The social context and the swallowing and mastication difficulties influence the eating behaviour as well as the motivation to eat. On the other hand, it was found that texture modified foods (food which texture is adapted to the need of people with swallowing and mastication problems) could act as motivational aspect. With regard to food personalisation in the elderly the consideration of three different case scenarios based on individual independency and the degree of oral impairment seemed to be appropriate. Different aspects such as gender weight, physical activity level as well as high protein demand are important influential factors in the development of personalised recipes in elderly. In addition to the above, a conversational agent was developed as behaviour change module and can be successfully used as smart personal assistant in helping the users to understand their eating habits and adopt healthier nutrition over the long term.
00 Technology can be very valuable to support older adults to remain healthy and active in their daily living. How to design technological product and service systems that will be adopted by older adults however still remains a challenge. This paper reports on an empirical study on how a co-creation ideation process can contribute to the technology adoption of older adults conducted in an EU project with multi-stakeholder teams with the aim of promoting physical activities of older adult citizens. This ideation process is adapted from Method A. By analyzing the co-creation ideation process from three different processes: the end user value-creation process, the stakeholder value-creation process and the encounter process in relation to the technology adoption process, i.e., the domestication adoption process, this paper demonstrates which technology adoption issues can be already addressed using this cocreation ideation process and which aspects still need to be taken further into account.
It is increasingly recognized that community-based interventions for active ageing are more lasting and effective, yet the tools and methods for developing these interventions are lacking. This study investigates how to co-design community-based active ageing with older adults via the development of a toolkit to support this goal. Rapid reviews were conducted to understand (i) the effective behavioural change techniques for older adults, (ii) how to co-design with older adults for community-based interventions, and (iii) how to design tools for behaviour change that are easy to use. These reviews served as the foundation for developing a toolkit to support the co-design of community-based active ageing, which was evaluated during an interdisciplinary hackathon with older adults. Quantitative data from the surveys suggested that the confidence levels of students in developing interventions for health behaviour change and in co-designing with older adults increased after the hackathon, and the enjoyment of participating in the hackathon and of using the toolkit were statistically significant factors influencing this increase. Qualitative data from interviews and observations revealed how the toolkit was (un)used by the participants and what aspects of the toolkit can be improved. We encourage future researchers and practitioners to apply and adapt our research findings to the communities of older adults that they are working with.
Given the unclear long-term effect and use of interventions for active aging, it is urgent and important to understand the facilitators and barriers via co-design with older adults at the community level. This study aims to lay the theoretical background on developing toolkits for co-designing community-based behavior change interventions with older adults. Rapid reviews were conducted in three disciplines to understand i) the effective behavioral change techniques for older adults, ii) how to co-design with older adults for community-based interventions, and iii) how to design tools for behavior change that are easy-to-use for older adults. The outcomes are a list of effective behavioral change techniques for older adults; guidelines for co-designing with older adults on community-based interventions; and a checklist for developing user-friendly tools for designing behavior change. These elements will serve as the foundation for developing the toolkit on co-designing with older adults for community-based behavior change interventions.
