O avium (Acetes marinus), crustáceo de água doce, tem elevada importância na culinária da região norte, e é comercializado comumente na forma salgada. A salga é um dos métodos mais utilizados, podendo reduzir a quantidade de água na forma disponível. No entanto, para a eficiência desse processo é necessário ter em consideração os fatores que influenciam no resultado final. Dessa forma o presente trabalho objetivou avaliar o teor de umidade, cinzas e atividade de água (Aw) em avium comercializado em Santarém, estado do Pará. Foram utilizadas 4 amostras de avium obtidas comercialmente na cidade de Santarém-PA, sendo 3 amostras salgadas e 1 amostra fresca. As análises de umidade e cinzas foram definidas por meio de secagem em estufa a 100°C e carbonização em mufla a 550°C, com 6 repetições cada. A Aw foi mensurada por analisador de atividade de água, em triplicata. Os dados foram submetidos a análise de variância, comparação de médias aplicando-se o teste de Tukey (P<0.05) e análise de correlação entre umidade e Aw. Obteve-se valores entre 53,92 e 80,35% de umidade; 0,54 e 0,08% para cinzas e 0,81-0,95 de Aw. Os valores de umidade encontrados estão acima dos padrões estabelecidos pela proposta brasileira para pescado salgado e seco, o que indica falta de controle da qualidade do produto no processo. Há correlação positiva (0,90) entre umidade e Aw. Assim, o controle de umidade, cinzas e Aw podem auxiliar na melhoria do avium comercializado.PALAVRAS-CHAVE: Acetes marinus, Salga, Vida de prateleira.
