RESUMO -Estudou-se o potencial de aproveitamento do resíduo do processamento de suco de mirtilo na saborização de bebida láctea. Três formulações de bebida láctea fermentada, com diferentes concentrações de um preparado feito com o resíduo, 20%, 30% e 40%, m.m -1 , foram submetidas a teste de preferência. A amostra mais preferida foi submetida a testes de aceitação e de intenção de consumo utilizando-se escala hedônica estruturada de 7 pontos, à determinação do teor de proteínas e de compostos fenólicos totais e à contagem de bactérias láticas totais e de coliformes a 35ºC e a 45ºC. As amostras com 20% e 30% foram as mais preferidas, sem diferirem estatisticamente entre si, sendo aquela com 30% a escolhida para o prosseguimento do estudo. Os resultados da análise sensorial dessa amostra apontaram aceitação entre "gostei moderadamente" e "gostei", com índices de aceitabilidade acima de 70%, e intenção de compra entre "consumiria ocasionalmente" e "consumiria frequentemente". Apresentou expressivo teor de compostos fenólicos, 90,73 mgGAE.100mL -1 , ao mesmo tempo em que atendeu aos parâmetros de qualidade e identidade para proteínas, bactérias láticas totais e coliformes a 35ºC e a 45ºC, conforme o que estabelece o regulamento técnico. Os resultados evidenciam a possibilidade do aproveitamento do resíduo em associação com alimentos tradicionalmente consumidos, podendo ser uma alternativa de baixo custo relativo para saborização e enriquecimento com compostos bioativos, entre outros.
