O preparo de refeições tem sido modificado pela rotina intensa de diversas pessoas, que buscam alimentos de qualidade nutricional e praticidade. Atendendo essa demanda surgiram os alimentos minimamente processados, como hortaliças higienizadas prontas para consumo. Hortaliças são propícias para a proliferação de microrganismos por serem ricas em nutrientes e água. Aumentar a vida útil desses produtos pode favorecer o crescimento de microrganismos patogênicos. O objetivo do estudo foi analisar a qualidade microbiológica de hortaliças minimamente processadas de marcas distintas comercializadas em hortifrúti e supermercado na região metropolitana de São Paulo. A metodologia foi experimental de delineamento transversal, realizado em duplicata, no qual avaliou-se a presença de coliformes totais e termotolerântes, Escherichia coli e contagem de mesófilos aeróbios e fungos e leveduras em placas de petri, utilizando-se a técnica de pour plate, em alface crespa, alface lisa, agrião e rúcula minimamente processados. Os resultados mostraram de Escherchia coli em 66,7% das hortaliças analisadas, indicando contaminação fecal, podendo ser justificada pela falha em etapas da produção. Metade das amostras apresentaram valores de contagem altos para fungos e leveduras. Conclui-se que é necessária a fiscalização na produção e no armazenamento desses alimentos para garantir que cheguem com qualidade ao consumidor.
