Zeit die nicht verbrauchte S~iure mit N.-Kalilauge zuriick. Die gewonnenen Zahlen sind in der S. 88 und 89 aufgefiihrten Tabelle bereits mitgetheilt. Stellt man die Ergebnisse zusammen; so finder man; dass die zur S~ttigung der alkalischen Reaktio~ in der Asche nothwendigen Mengen Sgure sich in engen Grenzen bewegen; wenn auch im Asehengehalte selbst grSssere Untersehiede sich zeigen. So sehwanken die Gehalte der Asche im reinen Himbeersyrup yon 0,20--0,32, die AlkalitSt betr.~gt 2,2--3,3 ccm N.-S~ure; im Rohsaft bewegt sich der Aschengehalt zwischen 0,35--0,6S, die zur Neutralisation nSthige SKuremenge zwischen 5;6--7,6 cem. Betrachten wir die gef~ilschten Fruchtsyrupe; also die mit Wasser verdiinnten, so sehen wir einen Aschengehalt yon 0,10--0,19~ und einen Verbrauch an S~iure zwischen 0,75-=2,0 ccm. Aus diesen Zahlen diirfte mit Sicherheir zu entnehmen sein, dass diesen Bestimlnungeu ein wirklicher Werth beigelegt werden muss und dass sie als ausschlaggebend zur Erkennung der in Frage stehenden FSlschung herbeigezogen werden miissen.Man darf daher wohl folgende Regel fiir die Beurtheilung aufstellen:In reinen Himbeersyrupen betr~igt der Gehalt an Mineralbestandtheilen nicht unter 0,20 g, die zur Neutralisation der alkalischen Reaktion der Asche erfor~lerliche Si~uremenge, auf ecru N.-SSure berechnet, nicht unter 2 ccm.Was die fiir den in Frage stehenden Nachweis ebenfalls empfohlene Bestimmung der S.~ure betrifft, so ist dieser ebenfalls ein gewisser Werth beizulegen; es muss dieser Befund dutch die vorgenannten bestgtigt sein.Ein niedriger Si~uregehalt, ein Gehalt an zuckerfreiem Extrakt unter 1;3 g, vor Allem aber ein Asehengehalt unter 0,20 g und ein geringerer S~ureverbrauch fiir die Asche als 2 ecru N.-S~ure sprechen deutlich fiir die Verwendung eines durch Wasserzusatz gefglschten Himbeerrohsaftes zur Darstellung des Syrups.
