ResumenEl cultivo de olivar para la producción de aceite de oliva es una actividad agraria de gran importancia económica y ambiental en Túnez. En los últimos años, el sector del olivar en este país ha experimentado importantes cambios en las prácticas agrarias. Así, sistemas tradicionales de cultivo de baja densidad están siendo sustituidos por sistemas innovadores de alta densidad, los cuales tienen mayor productividad, pero que pueden generar un alto impacto ambiental. El objetivo de este trabajo es evaluar los diferentes sistemas innovadores de producción de alta densidad (intensivo y súper-intensivo) y determinar el sistema más rentable y sostenible ambientalmente a lo largo de todo su ciclo de vida. Para ello, se ha evaluado un indicador económico mediante el análisis del Coste del Ciclo de Vida (CCV), Valor Actual Neto -VAN), y dos categorías de impacto ambiental mediante el Análisis de Ciclo de Vida (ACV), huella de carbono y ecotoxicidad, en un periodo de ciclo de vida del olivar de 50 años. La unidad funcional es 1 ha de olivar. El análisis se ha realizado en las dos regiones olivareras más importantes de Túnez: Sfax y Sidi Bouzid. Los resultados indican que el sistema intensivo es más rentable y ambientalmente más sostenible que el sistema súper-intensivo, debido principalmente a un menor coste de inversión inicial, una productividad similar y un menor uso de insumos químicos.Palabras clave: olivar, impacto ambiental, impacto económico, sistemas innovadores, Análisis de Ciclo de Vida.
