The data showed that the relationship between stocking density and productivity traits was not linear in nature, in accordance with other studies. Under the conditions of the current study, the performance, mortality and carcass characteristics of broilers grown at densities of 10, 15 and 20 birds per m2 were similar. There were some welfare implications at high population densities as indicated by adverse effects on litter quality, gait scores and the incidence of hock and foot pad burns.

A 3-week feeding trial using 300 1-day-old male broiler chicks was conducted to evaluate the effects of adding three levels of a microbial phytase (Finnfeed phytase; 250, 500 and 1000 U per kg diet) to a maize-soya-bean-meal diet containing 3·0 g/kg non-phytate phosphorus and 8·0 g/kg calcium. A diet containing 4·0 g/kg non-phytate phosphorus and 9·0 g/kg calcium served as the positive control. The responses were evaluated in terms of broiler performance, toe ash contents, ileal phytate degradation, ileal digestibility of nitrogen, amino acids, phosphorus, starch and fat, apparent metabolizable energy, apparent ileal digestible energy, and apparent retention of phosphorus and nitrogen. The addition of 500 U phytase per kg diet to the phosphorus-deficient maize-soya-bean-meal diet improved the performance and toe ash contents of broilers to equal those given the positive control diet. Ileal phytate degradation data provided direct evidence to the efficacy of phytase in hydrolysing the phytic acid. Addition of 500 U phytase per kg to the maize-soya-bean-meal diet which contained 3·0 g phytate-phosphorus per kg resulted in more than doubling of phytate degradation from 0·218 to 0·481. Supplemental phytase improved ileal digestibility of nitrogen, amino acids, starch and lipids, with these improvements being eventually reflected in enhancements in ileal digestible energy and apparent metabolizable energy.

Variation in the apparent ileal digestibility of amino acids in 19 meat and bone meal samples, obtained from commercial rendering plants in New Zealand, was determined using 5-week-old broilers. Assay diets contained meat and bone meal as the only source of protein, and chromic oxide as an indigestible marker for the calculation of amino acid digestibility values. Correlations of chemical composition (crude protein, ash, crude fat, and gross energy) and in vitro assays (protein solubility in 0.2% potassium hydroxide and nitrogen digestibility by 0.2% pepsin hydrolysis) with ileal amino acid digestibility were also examined. Considerable variation was observed in the contents of crude protein (38.5–67.2 g/100 g), ash (13.0– 56.5 g/100 g), crude fat (4.3–15.3 g/ 100�g), and gross energy (9.4–22.3 MJ/kg) of meat and bone meal samples. The amino acid concentrations and ileal digestibility of amino acids also varied substantially. Cystine, the first limiting amino acid in meat and bone meal, had the lowest digestibility estimates. Correlation analyses showed that the ash content was the only chemical parameter that was consistently correlated with amino acid digestibility. Digestibility of amino acids, with the exception of aspartic acid, threonine, serine, tyrosine, histidine, and cystine, was negatively correlated with ash content, with samples with high ash levels having lower digestibility. Both in vitro assay measurements were found to be insensitive indicators of variations in amino acid digestibility.

Numerous reports have evaluated the predictive ability of carcass probes for meat quality using measurements taken early postmortem or near 24 h. The intervening time period, however, has been largely ignored. In this study, the capacity of three probes [pH, electrical conductivity (EC), and grading probe light reflectance (GP)] to predict pork longissimus muscle quality (drip and cooking losses, Warner-Bratzler shear, L*, n = 30) was evaluated at 45 min, 90 min, 3, 6, 12, 24, and 48 h postmortem. The strongest relationships were observed between cooking loss and 6 h EC and GP (R 2 = 0.66, 0.72), and L* and GP (R 2 = 0.57-0.66, 12-48 h). pH was most valuable early postmortem (R 2 = 0.63, 90 min with cooking loss). GP at 6 h most effectively (R 2 = 0.84) predicted a two factor (cooking loss+L*) meat quality index. Results emphasize the predictive value of measures taken between 3 and 12 h postmortem.
