The aim of this study was to determine the quality and shelf life of sous vide turkey cutlet stored at 4 and 12ºC. Samples were packaged under vacuum into polyamide-polypropylene pouches, cooked using sous vide technology (65ºC/40 min), chilled at 3ºC and stored at 4 and 12ºC for 5 weeks. Microbial (TMAB, lactic acid bacteria, Enterobacteriaceae, moulds and yeasts, Salmonella spp., L. monocytogenes, Cl. perfringens), physical-chemical (pH, water activity, TBARS, L*a*b* colour, texture profile analysis and shear force) and sensory (appearance, colour, odour, flavour, juiciness, chewiness and acceptance) parameters were determined. According to the results of mesophilic bacterial counts and sensory analysis, the shelf life of the sous vide turkey cutlet, cooked at 65ºC for 40 min, was determined as 28 days at 4ºC while 15 days at 12ºC. Salmonella spp., L. monocytogenes, Cl. perfringens were not detected in turkey cutlet samples during the storage period. It was detected that sous vide cooked provided convenient ready-to-eat foods and a long shelf life for turkey cutlet.
The aim of the study was to isolate and identify an acetic acid bacterial strain having high cellulose yield and to investigate some physicochemical properties of bacterial cellulose (BC). Acetic acid bacteria were isolated by using 62 samples (vinegar, fruit, vegetable, and soil) from different region of Turkey. The cellulose production ability of 153 isolates was determined. A strain (A06O2) having high and stable cellulose yield was identified by biochemical tests and 16S rRNA gene sequencing and compared with type strain Gluconacetobacter xylinus NRRL B-759. Based on the results, strain A06O2 was named at the genus level as Gluconacetobacter, however, species level identification could not be made. Celluloses from both strains were purified to investigate the physicochemical properties such as thermal properties, solubility in various solvents, elemental composition, tensile properties, and surface properties by FTIR and SEM. The results showed that the cellulose samples of two bacterial strains differed in the physicochemical properties.
This study was aimed to examine the food safety knowledge of food handlers in hotels' kitchen, to determine existing knowledge gaps in food safety, and to examine relationship between food safety knowledge and some sample characteristics such as gender, age, education level, professional experience, and past attendance to food safety training course. A total of 378 food handlers working in hotel kitchens, located at six different cities in Turkey, participated in the cross-sectional study. The food safety knowledge score of participants was average with 53.70%. Knowledge scores related the different food safety aspects including personal hygiene (53.60%), food hygiene (53.91%), cross contamination (61.13%), health problems that would affect food safety (52.14%), symptoms of foodborne illnesses (52.00%), HACCP (51.00%) and food allergy (50.89%) were found average level. The most striking result of this study is that although the number of employees receiving food safety training is considerably high (82.3%), the food safety knowledge score was found less than expected. When viewed from this aspect, this work is remarkable about examining into content and adequacy of food safety training in Turkey.
Başlangıçta insan tüketimi için üretilen gıdaların atığa dönüşmesi, sadece gıdaların değil aynı zamanda üretim ve tüketim döngüsü sürecinde harcanan zaman, enerji, emek, para ve doğal kaynakların israfına da yol açmaktadır. Bu süreçteki israf kontrol altına alınmadığı takdirde, atıkların önüne geçilmesi ve sürdürülebilir üretim ve tüketim anlayışının benimsenmesi mümkün olmayacaktır. Restoranlarda oluşan gıda atıklarının belirlenmesi için yapılan bu çalışmada nitel araştırma yöntemlerinden olan görüşme tekniği kullanılmıştır. Veri toplama aracı olarak yarı yapılandırılmış görüşme formu oluşturulmuş, elde edilen veriler betimsel analiz yöntemi ile incelenerek verilerin sayısal olarak analizi yapılmıştır. Araştırmanın örneklemini İstanbul ilindeki 29 adet restoran oluşturmaktadır. Elde edilen bulgulara göre, işletmelerin yarısından fazlası (%58.6) atık takibi yaptıklarını belirtmişlerdir. Katılımcıların tamamına yakınının gıda atıklarına yönelik detaylı bir bilgiye sahip olmadıkları belirlenmiştir. Katılımcıların büyük çoğunluğu (%79.3) restoranlarda en çok atığın servis bölümünde meydana geldiğini belirtmiştir. Katılımcıların %68.9'u en çok atık oluşturan gıda grubunun sebzeler olduğunu ifade etmiştir. Gıda atıklarının değerlendirilmesi konusunda katılımcıların tamamı yağların biyodizel üretimi için biriktirildiğini, %82.7 ise gıda atıklarını farklı şekillerde yiyecek üretiminde yeniden kullanarak (sebze suyu, çorba, sos vb. yapımı) değerlendirdiklerini ifade etmişlerdir. Mutfaklarda meydana gelen atıkların en çok müşteri beklentisi (%31.1) ve personelin dikkatsizliği (%21) gibi faktörlerden kaynaklandığı belirlenmiştir. Tabaklarda oluşan atıkların sebebin ise müşterinin gereğinden fazla sipariş vermesi olduğu ifade edilmiştir. Bu sonuçlar doğrultusunda gıda atığını azaltmaya yönelik bir takım çözüm önerilerinde bulunulmuştur.
Bu araştırmada, geleneksel peynirlerimizden biri olan Mengen peynirinin kimyasal, biyokimyasal, tekstürel ve mikrobiyolojik özelliklerinin tanımlanması ve bazı uçucu bileşenlerinin belirlenmesi amaçlanmıştır. Kimyasal ve biyokimyasal analizlerde elde edilen ortalama sonuçlarda kuru madde %51.4±5.34, kül %3.57±0.73, protein %24±3.29, yağ %19.05±4.99, tuz %2.19±0.85, pH 5.72±0.44, asitlik %0.36±0.21, olgunlaşma indeksi değeri % 2.94±1.25, lipoliz değeri 0.87±0.73 meqKOH/100g-yağ olarak bulunmuştur. Mengen peyniri örneklerinde yapılan mikrobiyolojik analizlerin ortalama sonuçları toplam mezofilik aerobik bakteri 8.15±1.14 log KOB/g, laktik asit bakteri 7.19±1.42 log KOB/g, maya-küf 4.97±1.15 log KOB/g, koliform 6.09±1.36 log KOB/g, E. coli 3.79±1.87 log KOB/g, S. aureus 3.96±1.6 log KOB/g değerlerinde bulunmuş, Listeria, Salmonella, koagülaz pozitif S. aureus, E. coli O157 patojenlerine rastlanmamıştır. Tekstürel özelliklerin geniş bir profile sahip olduğu ve 130 uçucu bileşen bulunduğu tespit edilmiştir.
