Application of Enzymes: Proposals for an Experimental ClassAbstract: Currently, several groups of enzymes belonging to the classes of oxidoreductases and hydrolases have been applied as clean alternatives for many processes in food, detergents, textiles and pharmaceutical industries. The objective of this article is to present new approaches for undergraduate experimental classes based on simple and rapid methodologies, concerning the application of enzymes (cellulases, hemicellulases, pectinases, proteases, ureases and tyrosinases). The practices are adequated to be used in disciplines in the areas of enzyme technology and food technology, among others.

ResumoDiversos grupos de enzimas das classes das oxidorredutases e hidrolases são aplicados como alternativas limpas em muitos processos nas indústrias de alimentos, detergentes, têxteis e fármacos. O objetivo desse artigo é apresentar novas abordagens para disciplinas experimentais do ensino superior, baseadas em metodologias simples e rápidas, para a aplicação de alguns grupos de enzimas (celulases, hemicelulases, pectinases, proteases, ureases e tirosinases). As práticas são adequadas para serem oferecidas em disciplinas nas áreas de tecnologia enzimática e tecnologia de alimentos, dentre outras.
