AbstrakKonsentrasi bahan dasar dan pemlastis yang digunakan dalam formulasi Edible film diyakini mempengaruhi karakteristik fisik film. Tujuan dari penelitian ini adalah untuk mengevaluasi pengaruh konsentrasi bahan dasar (karagenan) dan pemlastis (gliserol) terhadap karakteristik Edible film yang dihasilkan dan untuk menentukan konsentrasi karagenan dan gliserol yang terbaik berdasarkan karakteristik fisik dari Edible film. Penelitian dilaksanakan dengan menggunakan rancangan acak lengkap faktorial dengan 3 kali ulangan. Perlakuan yang diterapkan meliputi konsentrasi karagenan (1%, 2%, and 3% (b/v)) dan konsentrasi gliserol (5%, 10%, dan 15% (b/b)). Hasil penelitian menunjukkan bahwa konsentrasi karagenan dan gliserol yang digunakan dalam formulasi berpengaruh terhadap karakteristik Edible film. Ketebalan film dan kadar air sangat dipengaruhi oleh konsentrasi karagenan dan gliserol, sedangkan pemanjangan hanya dipengaruhi oleh konsentrasi karagenan. Karakteristik fisik Edible film yang terbaik diperoleh pada konsentrasi karagenan 3% dan konsentrasi gliserol 10%.Kata kunci: bahan dasar, konsentrasi karagenan, ketebalan film, pemanjangan Characterization of Carrageenan Edible films Plasticized with GlycerolAbstract Concentration of base materials and plasticizers used in the formulation of edible film was believed to affect physical characteristics of the film. The objectives of this study were to evaluate the effects of base material (carrageenan) and plasticiser (glycerol) concentrations on the characteristics of edible films produced and to determine the best concentrations of these two components based on the physical characteristics of the films. The experiment was conducted using a completely randomized factorial design with triplicated. The treatments applied were the concentrations of carrageenan (1%, 2%, and 3% (w/v)) and glycerol (5%, 10%, and 15% (w/w)). The results showed that carrageenan and glycerol concentrations used in the formulation of edible film affect the edible film characteristics. Film thickness and moisture content were significantly influenced by carrageenan and glycerol concentrations, while film elongation was only affected by carrageenan concentration. The best physical characteristic of the edible films was obtained when carrageenan and glycerol concentrations were 3% and 10% respectively. Appropriate concentration of base material and plasticizer is required to obtain good physical and mechanical properties of edible film for food packaging and preservation functions. The aim of this study was to obtain the best combination of the base material and plasticizer in the manufacture of agar films based on physical and mechanical properties. Results showed that the physical and mechanical properties of the agar edible film were affected by the agar and glycerol concentrations. Increasing agar concentrations resulted in the increase in the film thickness, tensile strength (TS), and elongation at break (EAB), but decreased the filmsolubility. While increasing glycerol concentration tended to increase the film thickness and solubility, but decrease the TS of the film. The best concentration combination of agar and glycerol in this study was 3 and 10%, respectively.
This study aimed to analyze the bioactive compounds of Caulerpa recemosa, Sargassum sp., and Gracillaria verrucosa from Makssar Strait using three different solvents i.e. acetone, ethanol , and methanol. Samples of the seaweed C. recemosa collected from marine waters of Takalar regency, while Sargassum sp. and G. verrucosa were collected from marine waters of Pangkep regency which is part of the Makassar Strait. Seaweed crude extract qualitatively analyzed using Thin Layer Chromatography (TLC). The treatment applied in this studi is Sargassum sp. with acetone solvent, Sargassum sp. with ethanol solvent, Sargassum sp. with methanol solvent, C. recemosa with acetone solvent, C. recemosa with ethanol solvent, C. recemosa with methanol solvent, G. verrucosa with acetone solvent, G. verrucosa with ethanol solvent, and G. verrucosa with methanol solvent. Parameters measure were the total extract yield, total phenolic content and phytochemical compound of seaweed crude extrac. The result showed that the content of bioactive compounds crude extract of seaweed is affected by the species of seaweed and solvents used in extraction process. The crude extract of C. recemosa produces better bioactive compounds than the crude extract of G. verrucosa and Sargassum sp. as shown by the yield and total phenolic content of crude extract. The best solvent used in extracting bioactive compounds of C. recemosa is methanol. Identified phytochemical compounds from the crude extract of C. recemosa, are flavonoids, terpenoids, alkaloids, and phenols.
Ekstraksi gelatin dari kulit ikan patin (Pangasius hypopthalmus) telah dilakukan dengan perlakuan perendaman kulit dalam asam sitrat dalam berbagai pH yaitu.‑ 2, 3 dan 4 dengan variasi lama perendaman 12, 24 dan 36 jam. Kulit kemudian dicuci sampai pH netral dan gelatin diekstraksi pada suhu 70 dan 90 derajad Celcius selama 2 jam. Filtrat dikeringkan dalam oven suhu 50 derajad Celcius selama 36‑48 jam sehingga diperoleh lembaran gelatin. Penentuan perlakuan yang terbaik untuk ekstraksi gelatin dipilih berdasarkan rendemen, viskositas, kekuatan gel dan pH gelatin. Hasil penelitian menunjukkan bahwa perlakuan perendaman dalam asam sitrat pH 3 selama 12 jam, suhu ekstraksi 90 derajad Celcius selama 2 jam memberikan hasil yang terbaik yang diperlihatkan dari rendemen 9,36%, viskositas 10,1 cps, kekuatan gel 202,55 bloom dan pH 6,7.
Belut memiliki kandungan protein yang cukup tinggi, dan kaya akan kandungan EPA dan DHA. Meskipun kaya akan protein, EPA dan DHA, konsumsi belut oleh masyarakat Indonesia tergolong rendah. Hal ini disebabkan karena bentuk belut yang menyerupai ular sehingga masyarakat enggan memakan belut. Oleh karena itu perlu diupayakan pengolahan daging belut menjadi bentuk lain sehingga dapat meningkatkan konsumsi masyarakat terutama penderita gizi buruk. Salah satu bentuk pengolahan yang dapat dilakukan terhadap daging belut adalah kapsul konsentrat protein ikan (KPI). Penelitian ini bertujuan untuk mengkaji komposisi kimia KPI belut dalam bentuk kapsul sebagai makanan suplemen bagi penderita gizi buruk. Penelitian dilaksanakan menggunakan metode rancangan acak lengkap faktorial dengan perlakuan waktu pengukusan dan waktu pengeringan masing-masing tiga taraf yaitu 20, 30, dan 40 menit untuk pengukusan, dan 10, 15, dan 20 jam untuk pengeringan. Setiap perlakuan diulang sebanyak 3 kali. Pengamatan dilakukan terhadap komposisi kimia KPI melalui pengujian proksimat dan uji kadar kalsium. Hasil penelitian menunjukkan bahwa waktu pengukusan dan pengeringan pada proses pembuatan KPI belut, berpengaruh nyata terhadap karakteristik KPI yang dihasilkan terutama kadar protein dan kadar kalsium. Semakin cepat proses pengukusan dan semakin lama waktu pengeringan menghasilkan kadar protein dan kadar kalsium yang tinggi. Perlakuan waktu pengukusan dan pengeringan yang terbaik untuk menghasilkan produk KPI belut yang sesuai standar adalah masing-masing 10 menit untuk waktu pengukusan dan 40 jam untuk waktu pengeringan. Secara umum karakteristik KPI belut yang dihasilkan telah memenuhi beberapa kriteria standar makanan tambahan bagi penderita gizi buruk khususnya anak usia sekolah dasar.
