Ochratoxin A (OTA) is a mycotoxin mainly produced by mould species of the genera Aspergillus and Penicillium, which grow on a variety of agricultural products. OTA-contaminated foodstuffs pose a major health hazard to consumers, including human and animal. In Cote d'Ivoire, numerous studies are being carried out to find the best way of preventing OTA contamination of cocoa raw material. The objectives of this investigation were to assess the impact of industrial treatment on OTA content in cocoa-derived products. Samples of cocoa pods were prepared under specific conditions promoting fungal proliferation on cocoa beans before processing. The beans underwent the usual industrial treatments - roasting, shelling, crushing, pressing and additive addition - and samples were taken at each stage. OTA was extracted with a methanol/3% sodium hydrogen carbonate solution and purified using an immunoaffinity column prior to HPLC analysis with fluorescence detection. OTA was detected in artificially contaminated cocoa beans at levels ranging from 3.4 to 44.7 microg kg(-1) with a mean value of 22.9 +/- 3.6 microg kg(-1). OTA was mainly concentrated in the shell (93%). Roasting, shelling and additive addition significantly decreased levels of OTA by 24-40, 76 and 52%, respectively, with an overall reduction of approximately 91%. These results indicate that industrial processing of cocoa has a real impact on the reduction of OTA in final cocoa products.
La présente étude vise à déterminer les teneurs des pesticides organochlorés (POC) dans le lait de vache et du beurre élaboré traditionnellement. Ainsi, 90 échantillons de lait et 45 échantillons de beurre ont été collectés auprès des éleveurs installés dans les régions de Buyo, Grand-lahou et Yamoussoukro. Ces échantillons ont été traités en vue de déterminer les résidus de 14 POC. Les analyses ont été menées par chromatographie en phase gazeuse sur colonne capillaire avec un détecteur à capture d'électrons (ECD). Les résultats observés révèlent une contamination générale du lait et du beurre par les POC. Ainsi, des charges moyennes en hexachlorocyclohexane (HCH) de 42,75 µg/kg et 165,94 µg/kg), en endosulfane de 31,58 et 436,80 µg/kg, en heptachlore 8,70 et 59,91 µg/kg et en Dichlorodiphenyltrichloroethane (DDT) 36,20 et 227,82 µg/kg, ont été respectivement déterminées dans le lait et dans le beurre. La teneur résiduelle moyenne des isomères HCH et des cyclodiènes (dieldrine, endosulfane et heptachlore) constitue respectivement 36,9 % et 13,2 % de la moyenne du total des POC mesurés dans le lait et respectivement 40,7 % et 28,2 % de celle mesurée dans le beurre. Le DDT et ses métabolites mesurés dans nos échantillons représentent 49,9 % du total des POC du lait et 31 % pour le beurre.
Ochratoxin A (OTA) is a mycotoxin produced mostly by several species of Aspergillus and Penicillium. OTA is nephrotoxic in all animal species in which it has been tested and is cancerogenic in rodents. It is associated with Balkan endemic nephropathy. It is naturally present in many crop products such as cereals (barley, wheat, maize) and dried fruits, spices, coffee, wine, olives, and cocoa. The aim of this study was to assess the contamination of three Ivoirian spices with OTA (ginger, chili, and pepper) widely consumed by the population. A total of 90 spice samples (ginger: n = 30; chili: n = 30; pepper n = 30) was taken from various sales outlets of Abidjan. OTA was quantified using an HPLC apparatus coupled with a fluorimetric detector. The chili and ginger samples were contaminated with OTA at a mean concentration of 57.48 ± 174 and 0.12 ± 0.15 μg/kg, respectively. No contamination of the pepper samples was detected. Eight (26.67 %) of the chili samples exceeded the maximum limit of 15 μg/kg established by European regulation. These results should serve as an alert on the risk to the consumer population of these products that are highly contaminated with OTA.
Détermination du niveau de contamination et de l'apport en résidus de tylosines (macrolides) des oeufs de consommation dans le District d'Abidjan (Côte d'Ivoire)
Les aflatoxines sont des contaminants cancérogènes retrouvées fréquemment dans les denrées alimentaires. Dans cette étude, il s'agit de disposer d'informations relatives à la prévalence des aflatoxines dans les aliments de base du département de Séguéla. Pour ce faire, une identification des denrées alimentaires responsables de l'exposition des populations aux aflatoxines a été faite et le niveau de contamination de ces aliments en aflatoxines a été déterminé. Ainsi, une enquête basée sur le régime alimentaire a permis d'identifier le maïs, le riz, le manioc, l'arachide et le gombo comme les principales denrées alimentaires utilisées pour la confection des mets et de connaître les quantités journalières consommées par la population. L'échantillonnage réalisé selon la réglementation de la Commission Européenne (CE) 401/2006 et le guide LAB GTA 21 Révision 02/2017 du COFRAC a permis de déterminer leur charge en aflatoxines. Les résultats des analyses effectuées par HPLC avec extraction sur colonnes d'immuno-affinité, montrent des niveaux très variés de contamination des échantillons par l'Aflatoxine B1 (AFB1) allant de 0,02 à 18,65 µg/kg, avec 22% des échantillons dépassant le seuil maximum de 2 µg/kg fixé en AFB1 par la CE N° 1881/2006. Ces teneurs obtenues en AFB1 conduisent à un risque d'exposition de la population aux effets toxiques de cette molécule.
