Layered double hydroxides (LDHs) with similar compositions to the minerals shigaite, natroglaucocerinite, and motukoreaite were synthesized by co-precipitation with increasing pH and characterized by several instrumental techniques. These minerals have previously been described to occur only with sodium and sulfate (Na­(H2O)6)­[M+2 6Al3(OH)18(SO4)2]·6H2O (M2+ = Mn, Mg, and Zn). These phases were synthesized successfully along with others containing lithium and potassium. Cation exchange reactions were performed in the presence of alkaline metal sulfates, and for the first time several instrumental techniques were employed to show that the cations can be totally exchanged without removing the intercalated sulfate anions. This class of compounds, traditionally considered to be anion exchangers, can also be considered cation exchangers, which opens new avenues for future scientific and industrial applications.

Layered double hydroxides [Mn2Al(OH)6](An−)x/n·yH2O (An− = Cl− or NO3−) were exchanged with Na2SO4 and cationic/anionic exchangers [Mn6Al3(OH)18](SO4,NaSO4) were obtained.

The chemical configuration of the lactobionic acid (LBA) evidences its potential properties, among which the antioxidant, antimicrobial, and chelating activities stand out in the literature. However, few studies aim at testing and confirming them. The purpose of this study was to determine some selected LBA properties, whose characteristics are of interest for its use as an ingredient in foodstuffs. The discussion followed the results of Fourier‐Transform Infrared Spectroscopy (FTIR), X‐ray diffractometry (XRD), 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) radical, 2,2′‐azino‐bis(3‐ethylbenzothiazoline‐6‐sulphonic acid) (ABTS) radical, thermogravimetric/derivative thermogravimetry (TGA/DTG), minimal inhibitory concentration (MIC) by the diffusion disk test, scanning electron microscopy (SEM), and iron/calcium chelating methodologies. The XRD analysis revealed the presence of an amorphous halo and the absence of defined peaks, a fact possibly related to its high hygroscopicity. The FTIR showed characteristic bands of the LBA structure. Results from TGA/DG verified the LBA thermal degradation, which evidenced that LBA could participate in most food industry unit processes within the first mass loss event. Antioxidant capacity reached a maximum inhibition of 56% for LBA and the chelating capacity of the iron ion achieved 54% of chelated ions, while the calcium ions reached 15%. The results revealed high potential of LBA application for microbial inhibition, moisture retention, and texture maintenance throughout storage of food products. Practical Applications Despite the potential of application of the LBA, few quantitative results demonstrate its ability of action in food. Even without permission in most countries around the world, more research with LBA will encourage the investigation of its toxicology, expanding the areas of application. Its thermal degradation profile and elevated solubility demonstrated the potential of LBA as food ingredient, performing moreover as antioxidant, chelating agent, antimicrobial, and texturizer. The results open the possibilities for many applications in the field of food chemistry and food industry.

, respectively) were designed. All formulations exhibited attractive nutritional properties, mainly due to the levels of protein (F1: 11.6 and F2: 10.7 g 100 g ). There was no significant difference (p < 0.05) in color parameters between the upper surfaces of F1 and F2, and between the undersides of cookies. Both compositions showed high acceptability in color, texture, odor and taste, with a predominance of scores of the category 8 (like very much) and no statistical difference (p < 0.05) in the perception of these attributes by the tasters between formulations. The results of the purchase intention test suggest a good commercial prospect for the cookies developed. Our findings represent a new proposal for the use of flour with unripe banana and birdseed in the development of a food product with high added value.

RESUMO No presente trabalho, utilizou-se a caulinita como material base para a obtenção de materiais nanocompósitos. A caulinita foi utilizada na forma in natura, tratada termicamente à 700 ºC e quimicamente com ácidos fosfórico e sulfúrico na concentração de 6 mol L-1. O objetivo dos tratamentos foi modificar e preparar a estrutura da caulinita para ser usada como um suporte para o TiO2. Por meio do método dos precursores poliméricos foi sintetizado o TiO2 e nanocompósitos à base de caulinita e TiO2. Os nanomateriais foram caracterizados por Difratometria de Raios X (DRX), UV-Vis, para determinar o Bandgap, Espectroscopia na Região do Infravermelho com Transformada de Fourier (FTIR), Microscopia Eletrônica de Varredura (MEV) e Espectroscopia de Energia Dispersiva (EDS). Por meio dos espectros de FTIR foi possível verificar as bandas características da caulinita in natura e o aparecimento de vibrações características da metacaulinita. A análise de DRX revelou que foi possível promover o aumento da cristalinidade das amostras de caulinita após tratamento com o citrato de titânio, isto pode ser decorrente da adesão do óxido de titânio na superfície da caulinita. Pela análise de EDS foi possível determinar a porcentagem de Ti (m/m) nas amostras sintetizadas, sendo que seu valor ficou entre 2,03 e 4,16 %. As análises por ICP-OES indicam que as amostras apresentam de 2,65 a 4,07% de Ti e os dados do Bandgap variam de 1,69 a 3,44 eV para as amostras com e sem Ti em sua composição.
