International audience1. Dry matter digestibility is a critical component of herbage nutritive value, a major service delivered by grasslands. The aim of this study was to test whether the dominance hypothesis applies to assess the impacts of environmental gradients and management regimes on thiscomponent of herbage nutritive value in permanent grasslands. 2. At the plant level, digestibility has been related to a number of functional traits, but whether this can be scaled up to the community level in species-rich grasslands and how such relationships are modulated by environmental conditions and management regimes remainunknown. Our primary objective was to test whether community-weighted means – species trait values weighted by the species abundance – of morphological, phenological and chemical traits could be used to explain variations in digestibility over a large range of climatic contexts,soil resource levels and management regimes. Our second objective was to explain variations in community digestibility within and among nine contrasting sites along large natural and man-induced environmental gradients.3. Over the whole data set, digestibility and most community-weighted means of traits responded to climatic factors and management regimes, but relations were not always significant when each site was considered separately. Community digestibility was significantly related to one or more plant traits within each site and to all of the measured traits when considering all the sites. Leaf dry matter content (LDMC) had the most consistent effects on digestibility, with a strikingly similar negative effect within each site. Potential evapotranspiration was negatively related to digestibility and contributed to explain a large part of the among-site variance. In addition, a low return interval of disturbance and a high disturbance intensity (biomass removal) were both associated with a high digestibility.4. Synthesis and applications. Disturbance regime, plant traits and local climate impacted dry matter digestibility roughly equally in grasslands. The effects of community composition on digestibility and its response to abiotic factors could be successfully captured by community weightedmeans of leaf dry matter content. This functional marker can be used to develop indicators and grassland management rules to support farmers in the refinement of their practices towards specific needs, such as target production outputs
The objective of this work was to compare milk fatty acid (FA) profile and texture and appearance of Cantal cheeses obtained from cows grazing 2 different upland grasslands: a highly diversified pasture (74 species) of area 12.5 ha managed under continuous mode (C), and a weakly diversified pasture (31 species) of area 7.7 ha (an old temporary grassland) managed under rotational mode (R). A control group of cows fed a hay-based diet (indoors, I) was used. Three equivalent groups of 12 Montbéliarde cows underwent the 3 treatments from May to September 2008. The cheeses were manufactured during 3 consecutive days in early June, early July, and late August (27 cheeses in all). The texture, appearance, and chemical composition of the cheeses were determined after 12 wk of ripening. Concentrations of total saturated FA and monounsaturated FA were higher and lower, respectively, in I milks compared with pasture milks. The concentrations of trans-11-C18:1 and cis-9-C18:1, and polyunsaturated FA as well as yellowness decreased during the season in C-derived milk but remained constant in R-derived milk, through a combined effect of grass development stage and the cows' grazing selection. The I cheeses were, on average, firmer, less creamy, less elastic, and less yellow than the pasture cheeses. Decreasing and increasing trends in texture firmness during the season were observed for C and R cheeses, respectively. The rind of the pasture-fed cow cheese had fewer, less intensely colored, and less prominent spots than did that of I cheeses. This difference was probably due to greater migration of fat to the rind during pressing because of the lower fat melting point of the pasture-fed cow cheeses, which had higher unsaturated FA content. The greater amounts of fat deposited on the rind of the pasture-fed cow cheeses may have partially inhibited the microbial activity responsible for rind appearance. Our trial underlines the importance of the effects of grazing management associated with vegetation type on milk and cheese characteristics.
Although stocking rate is a key management variable influencing the structure and composition of pastures, only few studies have simultaneously analysed the seasonal patterns of pasture use by cattle, and the adjustments the animals make to maintain intake of a high-quality diet over the grazing season. Therefore, over a 3-year study, we recorded diet selection, plot use and impact of heifers on sward structure and quality under three different stocking rates (0.6, 1.0 and 1.4 livestock units (LU) per ha) in a species-rich mountain pasture of central France. Measurements were made on three occasions between early June and the end of September each year. Overall, heifers selected for bites dominated by legumes or forbs, and against reproductive grass, whatever the stocking rate or season. Selection for tall mixed (P , 0.05), short mixed (P , 0.05) and short pure grass bites (P , 0.01) was more pronounced in plots grazed at the lowest stocking rate. Although heifers' selection for short patches decreased at the end of the season (P , 0.001), they continued to graze previously grazed areas, thus exhibiting a typical 'patch grazing' pattern, with the animals that grazed at the lowest stocking rate tending to better maintain their selection for short patches in September (treatment 3 period: P 5 0.078). Neither diet quality nor individual animal performance were affected by the different stocking rate treatments despite high variability in the quantity and quality of herbage offered and differences in diet selection. However, at the 1.4 LU per ha stocking rate, the quantity of forage available per animal at the end of the season, 0.79 t dry matter (DM) per ha of green leaves with the median of sward height at 4.6 cm, approached levels limiting cattle's ability to compensate for the effects of increasing stocking rate. In plots grazed at 0.6 LU per ha, the total herbage biomass remained higher than 3 t DM per ha with more than 30% of plot area still covered by reproductive grass patches at the end of the grazing season, which in the medium term should affect the botanical composition of these pastures. Sward heterogeneity was high in plots grazed at 1.0 LU per ha, with sufficient herbage availability (1.1 t DM per ha of green leaves) to maintain animal performance, and more than 15% of plot area was kept at a reproductive stage at the end of the grazing season. Hence, it could represent the optimal balance to satisfy both livestock production and conservation management objectives.
Two types of diagnostics are used for N management in grasslands: diagnostics based on N concentration of shoots and diagnostics based on soil mineral N. The Nitrogen Nutrition Index (NNI) is an example of the first type. However, its evaluation requires the determination of shoot dry weight per unit area and, thus, constitutes a practical limit to its utilization in the context of farm studies. In order to simplify its evaluation, a method based on the N concentration of the upper sward layer (N up ) has been proposed. The objectives of this study were to test the relationship between NNI and N up in the context of permanent grassland and to examine the relationship between N up and soil mineral status. The study was conducted as two experiments, one on small cut-plots receiving contrasting rates of mineral N fertilization, and a second on plots of an existing field-scale lysimeter experiment. In each plot and at several dates, shoot biomass within quadrats was measured, N concentration was determined on the upper leaves and on the entire shoots, and mineral nitrogen of the soil below the vegetation sampled was determined. N concentration of the upper lamina layer of the canopy was linearly related to the NNI determined on the entire shoots. Therefore, determining N concentration in leaves at the top of canopy appears to be an alternative means to evaluate NNI without having to measure shoot biomass. The absence of an overall significant correlation between soil mineral N content and sward N index, observed over the two studies, indicates that each of these two indicators has to be considered specifically in relation to the objective of the diagnostic procedure. As sward N index may vary independently of soil mineral N content, the sward N indicator does not appear to be a suitable indicator for diagnosis of environmental risks related to nitrate leaching. However, soil mineral N content does not allow the prediction of sward N status and thus is not a suitable indicator of sward growth rate. Although soil mineral N content is an important environmental indicator for nitrate-leaching risks during potential drainage periods, it has a limited diagnosis value with respect to the herbage production function of grasslands.
The effect of stocking rate on the species richness, abundance and functional diversity of vascular plants, butterflies and grasshoppers was examined in a seminatural upland pasture in central France. Over a 5-year period, 3AE6-ha plots were continuously grazed by Charolais heifers at 1AE4 (High stocking rate), 1AE0 (Intermediate) and 0AE6 (Low) livestock units (LU) ha )1 . To evaluate botanical diversity, percentage cover of all plant species was estimated in late July in ten fixed 1 m · 1 m quadrats per plot. Butterflies were counted on three occasions between late June and early August along three fixed 50-m-long transects per plot using the 'Pollard walk', with grasshoppers being recorded on two occasions along the same transects. Diversity patterns of the three taxa were affected by stocking rate. For plants, species abundance changed more than species number. Abundance of forbs became higher under the Low compared with the High stocking rate. Stress-tolerant grasses were also more abundant in plots grazed at the Low stocking rate, while an opposite trend was observed for competitive grasses. Butterflies consistently responded to alterations in vegetation composition, especially to the dynamics of nectar plants. The species richness of grasshoppers also increased in plots at the Low stocking rate. The Low and Intermediate stocking rates were suitable for providing a high diversity of the three taxonomic groups. The results suggested that at least butterfly diversity would peak in vegetation taller than that of vascular plants.

Herbage mass and animal performances were comparable with continuous grazing AbstractGrazing management is an important tool to preserve insect biodiversity. Although literature has discussed the importance of grazing pressure adjustment to support grassland insect communities for the ecosystem services they provide, little has been published on the economic sustainability of such management adjustments to date. This study compared continuous grazing (CG) to an innovative rotational grazing system (the biodiversity-friendly rotation -BR), where a subplot was excluded from grazing for two months during the main flowering period. The effects of grazing two different species (cattle and sheep) within both systems were also evaluated. The aims were to assess the effects on butterfly, bumblebee, and ground beetle assemblages, along with the impact on herbage mass and animal performance. The BR enhanced both the abundance and species richness of flower-visiting insect assemblages and it was observed that cattle provided better results than sheep grazing. A multivariate redundancy analysis highlighted that most of the flower-visiting species (including almost all the endangered and locally rare species) were favoured by BR-cattle treatment, mainly due to the high percentage of flower cover and sward heterogeneity involved in this treatment. However, grazing Page 3 of 29 system and grazer species did not affect ground beetle species richness or abundance. Moreover, herbage mass and animal performance (live weight and body condition score) were comparable between CG and BR throughout the grazing season. The BR could be a useful management system to enhance grassland flower-visiting insect assemblages whilst meeting farm production objectives, especially in protected environments where insect conservation is a major target.
