The aim of the study was to evaluate the microbiological and chemical contamination in settled dust at poultry farms. The scope of research included evaluating the contributions of the various granulometric fractions in settled dust samples, assessing microbial contamination using culture methods, concentrations of secondary metabolites in dust and their cytotoxicity against hepatocyte chicken cells by means of MTT (3-(4,5-dimethylthiazolyl-2)-2,5-diphenyltetrazolium bromide) tests. In addition, we also evaluated the concentration of selected volatile odorous compounds (VOCs) using gas chromatographic and spectrophotometric methods and airborne dust concentration in the air with DustTrak™ DRX Aerosol Monitor. Studies were carried out on chicken broilers and laying hens at 13 poultry farms, with numbers of birds ranging from 8000 to 42,000. The airborne total dust concentration at poultry farms averaged 1.44 mg/m3 with a high percentage of the PM10 fraction (particulate matter with a diameter less than 10 μm). Microorganism concentrations in the settled dust were: 3.2 × 109 cfu/g for bacteria and 1.2 × 106 cfu/g for fungi. Potential pathogens (Enterococcus spp., Escherichia coli, Salmonella spp., Aspergillus fumigatus, Paecilomyces variotii) were also found. Secondary metabolites included aurofusarin, deoxynivalenol, 15-hydroxyculmorin zearalenone, zearalenone-sulfate, infectopyron, and neochinulin A. However, the dust samples showed weak cytotoxicity towards chicken hepatocyte cells, which ranged between 9.2% and 29.7%. Among volatile odorous compounds ammonia, acrolein, methyloamine, acetic acid, acetoaldehyde and formaldehyde were detected in the air. In conclusion, settled dust can be a carrier of microorganisms, odours and secondary metabolites in poultry farms, which can be harmful to workers’ health.

We tested the effect of cadmium (25, 130 microg Cd g(-1)), administered via Chinese cabbage (Brassica chinensis L.) as food on life-history parameters and gut microflora of tritonymphs and adults of the oribatid mite, Archegozetes longisetosus Aoki. Both concentrations of Cd had an adverse effect on offspring mortality, and the higher concentration also reduced female fecundity, as well as the number of bacteria, fungi and actinomycetes, and it changed the community structure of bacteria; the proportion of gram-negative bacteria increased while that of gram-positive bacteria declined. Interestingly, at the lower Cd concentration microflora was more abundant and diverse than in the control group, especially in the tritonymphs, although the mean activity of gut microflora was reduced. The higher Cd concentration reduced microflora activity both in the tritonymphs and adults.

Compared to conventional agriculture, organic farming is believed to provide a higher nutritional and health value in its products due to the elimination of harmful contaminants (pesticides, nitrates, heavy metals, etc.). Numerous studies have been conducted to show how the production system affects the quality of food in terms of the content of bioactive compounds. The aim of this study was to compare the content of some bioactive compounds (vitamin C, β-carotene, Ca content) and lactic acid bacteria (LAB) number and their bacteriocinogenic activity in organic and conventional fermented food. Although the results do not provide an unambiguous conclusion regarding the superiority of one production system over the other, the LAB number in organic pickled carrot juice, sauerkraut, yogurt, and kefir was higher than in their conventional counterparts. Their bacteriocinogenic potential against selected pathogens was also higher in most organic products. Organic vegetables contained significantly more vitamin C, and the calcium content in the organic yogurt was higher compared to the conventional version of the product. Relatively similar concentrations of ß-carotene for both production systems were found in carrot juice, while in organic pickled beet juice, there was five-fold less ß-carotene than in conventional juice.
