Esta revisão teve como objetivo relatar as pesquisas que têm sido realizadas sobre a aplicação da tecnologia de separação por membranas, mais especificamente a micro e a ultrafiltração, incluindo o pré-tratamento enzimático no processamento de sucos de frutas. Foi dada ênfase à utilização desses processos na etapa de clarificação e na conservação dos sucos. Estudos sobre a preservação de compostos bioativos durante o processamento de sucos por membranas também foram abordados. Concluiu-se que a utilização de enzimas no pré-tratamento para os processos de separação por membranas apresenta, de maneira geral, resposta positiva nos fluxos de permeado. A aplicação dos processos de micro e ultrafiltração são eficazes na clarificação e na conservação dos sucos de fruta, sendo utilizados com sucesso na retenção de compostos responsáveis pela turbidez dos sucos e resultam em produtos com elevada qualidade sanitária. Na expectativa de preservar nutrientes e compostos bioativos, o processo através de membranas apresenta-se altamente viável, devido ao aproveitamento dos coprodutos (retentado) para a elaboração de produtos com propriedades funcionais. O processamento de sucos mediante membranas, efetivado em baixas temperaturas e com eliminação de diversas etapas frente aos métodos convencionais, apresenta-se como alternativa promissora, refletindo a tendência mundial por processos mais eficazes e tecnologicamente mais avançados.
