RESUMO Pesquisas indicam que o mel contém mais de duas centenas de substâncias, sendo considerado de grande importância na medicina tradicional, desde a antiguidade até os dias de hoje. Parâmetros físico-químicos de méis contribuem para o controle da qualidade do mel produzido, assim protegendo o consumidor de adquirir um produto adulterado ou alterado. Teve-se por objetivo o aprofundamento do conhecimento sobre a qualidade dos méis produzidos na região Sul do Rio Grande do Sul, especialmente a sua manutenção em relação à estabilidade durante a estocagem. A qualidade de quarenta e quatro méis foi mensurada através das análises físico-químicas de amostras advindas da região Sul do Rio Grande do Sul. O delineamento foi inteiramente casualizado, formando um esquema bifatorial entre o fator mel, composto por quarenta e quatro amostras, combinado com o fator estabilidade no armazenamento em 365 dias. As análises físico-químicas seguiram os métodos preconizados pelo Instituto Adolfo Lutz e Ministério da Agricultura. Os resultados foram comparados com a legislação em vigor no país e literatura científica correlata. Dentre as amostras de mel analisadas, 40,91% méis foram considerados viáveis, com média de 0,76 ml no teor Lund. Os valores médios encontrados foram de 3,9 para pH, 78,7ºBrix, acidez 3,8 meq/kg, 16% de umidade e 0,3% de cinzas. O mel, considerado importante recurso para a alimentação e promoção da saúde, pode sofrer adulteração por produtos mais baratos (por exemplo, sacarose) ou, ainda, por mais resistente que seja, pode sofrer deterioração se não for bem extraído e conservado, fatores que preocupam e colocam em risco a saúde do consumidor. As amostras de mel produzidas na região Sul do Rio Grande do Sul analisadas, apresentaram estabilidade físico-química para o armazenamento superior a um ano.
