Since 1990, both people’s recognition of the need for sustainability around the world and environmental management systems in the tourism industry have been growing. Academic studies have primarily focused on the willingness of consumers to pay more to stay in major hotel chains, finding that the incorporation of environmental management systems (EMSs) is a way to save money by reducing costs, while improving the image and competitive advantage of these chains in the market. However, the aggregate environmental impact of tourism activity does not only depend on the practices of industry leaders. It also relates to the degree to which all stakeholders adopt these practices. Boutique hotels fall under the category of small-sized accommodation and are characterized by their size, independent management, and respect for the local environment. Hotel consumers display positive attitudes with respect to green hotel practices, which provides a starting point for motivating hotels to continue working on improving their environmental impact performance. For this reason, the objective of this paper is to determine whether boutique hotel clients are willing to pay more for a hotel with an environmental management system. Two dependence techniques are applied, logit regression and linear regression. The results show that the respondents’ age and income, as well as the strength of their environmental commitment, are determinant factors of whether clients would pay more to stay in a boutique hotel with an EMS. This preliminary study tries to investigate the “willingness to pay” in the Spanish boutique hotels. The originality of this article responds to the demand for a more holistic perspective on the hospitality sector, contributing to the understanding of hotel clients and their willingness to pay more for an EMS.
The tracking of tourist movements is an essential aspect in the management of sustainable tourist destinations. The current information and communication technologies provide innovative ways of collecting data on tourist movements, but it is still necessary to evaluate tools and methods of study for this challenge. At this point, mobile technologies are the best candidate for this task. Given the relevance of the topic, this paper proposes a mapping science analysis of publications on "movement of tourists" and "traceability." It has been carried out in the two main sources WOS and SCOPUS. The term "traceability" is brought from industry and technology areas to be applied to the tourist movement/mobility tracking and management. The methodological scheme is based on a selection of search criteria with combinations of terms. The sources of specialized information in applied social sciences and technology were then selected. From there, the searches have been executed for their subsequent analysis in three stages-(I) relevance analysis filtering the results to obtain the most pertinent; (II) analysis of articles with similarity thematic, authors, journals or citations; (III) analysis of selected papers as input for the mapping analysis using Citespace. The automatic naming of clusters under the selected processing confirms that the analysis of movements is a valid scientific trend but research-oriented from the perspective of traceability is non-existent, so this approach is novel and complementary to existing ones and a potential contribution to knowledge about tourist movements. Finally, a set of methodological considerations and a classification of information capture tools are proposed. In this classification, mobile technology is the best option to enable tourist movement analysis.
PurposeThis exploratory study aims to identify the main risk reduction strategies when individuals suffer from coeliac disease (CD) or non-coeliac gluten sensitivity (NCGS) travel. Based on Yeung and Yee's (2013; 2019) model, the paper offers a new framework for analysing the main travel risk reduction strategies for people with specific food needs. The empirical work focuses on the perspectives of different stakeholders (CD and NCGS community, restaurant managers/service providers and nutritionists).Design/methodology/approachA qualitative approach based on thematic analysis is adopted. The results of 32 semi-structured in-depth interviews reveal different stakeholders' perspectives in order to understand the various strategies.FindingsThe findings confirm the high level of consensus that the main food risk reducers are: travel information, staff training in safety assurance, legislation and risk prevention protocols. The findings also show significant limitations in the information offered by restaurants, organisations and tourist destinations and the negative repercussions on the tourist experience and the reputation on a particular destination.Practical implicationsThe results will help hospitality business managers and destination management organisations develop food risk reduction strategies to solve some of the most important food-related problems when people in this market segment travel.Originality/valueThis work contributes to the literature by providing a new framework on travel risk reduction strategies for people with specific food needs. The novelty of this research is mainly found in the study of risk reduction strategies related to the travel decision-making process for those with CD and NCGS from different perspectives.
