La calidad bacteriológica de la leche cruda bovina tiene implicaciones económicas y sanitarias muy importantes para el desarrollo agropecuario de los países. En este sentido, se realizó el presente trabajo para conocer la calidad bacteriológica de la leche cruda bovina almacenada en un centro de acopio de la provincia de Tungurahua, Ecuador. Se analizaron un total de 20 muestras de leche obtenidas durante las épocas de invierno y verano de los tanques de almacenamiento de los transportes de las rutas, así como del tanque del centro de acopio. Se cuantificaron los siguientes indicadores de calidad bacteriológica: bacterias aerobias mesófilas, Enterobacteriaceae, Staphylococcus y Salmonella. Estos indicadores se ajustan a las normas ecuatorianas INEN para leche cruda bovina, utilizando los medios de cultivos y las condiciones de incubación indicados en las normas para cada uno de los grupos bacterianos evaluados. En la época de invierno se obtuvieron valores promedios para las bacterias aerobias mesófilas de 1,22 x 108 UFC/mL, Enterobacteriaceae 7,90 x 105 UFC/mL y Staphylococcus 6,12 x 104 UFC/mL. En la época de verano los valores promedios obtenidos fueron bacterias aerobias mesófilas 8,07 x 106 UFC/mL, Enterobacteriaceae 4,76 x 104 UFC/mL y Staphylococcus 1,42 x 104 UFC/mL. Se pudo detectar en dos de las muestras la presencia de Salmonella. Los resultados obtenidos en este estudio indican que se está en presencia de leche cruda con valores muy altos de los indicadores bacteriológicos, lo cual implica deficiencias en su calidad sanitaria, sobre todo en la época de invierno.
La parasitosis intestinal es un problema de salud que afecta aquellas zonas rurales debido a varios factores como higiene personal, saneamiento ambiental y condiciones socioeconómicas, siendo la carga parasitaria mayor en niños que en adultos. A lo cual esta investigación tuvo como objetivo determinar la prevalencia de parasitosis y su relación con la desnutrición en niños menores a 12 años de la parroquia de San Luis – Chimborazo, población de estudio conformada por 610 niños, donde se evidenció que el 91.48% presentaba parásitos, dentro de los relevantes fueron 30.36% de los quistes de Entamoeba coli, quistes de Entamoeba histolytica 19.02%, Iodameba bütschili 2.79%, Chilomastix mesnili 3.93%, mientras que Giardia lamblia 5.08%, del mismo modo se evidencia que el 22.30% de las muestras se encuentran poliparasitadas. Con respecto al análisis hematológico se determinó que el 12.13% presentaban valores disminuidos de hemoglobina. A lo que se concluye que no existe relación estadísticamente significativa entre la parasitosis intestinal con la desnutrición.
One of the traditional fresh cheeses in Ecuador is the artisanal leafcheese, a kind of stretched-curd cheese. The artisanal product is wrapped in achira leaves (Canna indica), while the industrial leafcheese is packed at vacuum in high density polyethylene bags. In this study the microbiological quality of both products was compared. The hygienic-sanitary microbial indicators and lactic acid bacteria (LAB) were quantified. The LAB isolated were characterized phenotypically. The samples were obtained from artisanal cheese-making and industrial located in Latacunga city province Cotopaxi. The total aerobic mesophilic count was made based on national regulations (NTE INEN 1529 5); total coliforms, Escherichia coli and Staphylococcus aureus was evaluated using petrifilm methods (AOAC 991.14 – AOAC 2003.07) and to LAB was used PRT-712.02-047. The results show high quantities of total coliforms, E. coli and S. aureus in both products, these data exceed the limits of acceptability established in Ecuadorian regulations, this evidence poor hygienic quality of the processes or incorrect controls of milk as raw material. The lactic acid bacteria count showed statistically significant differences, the industrial cheeses had a reduction of 18,15% of Lactobacillus and 14,27% of Lactococcus compared with artisanal cheeses. A total of 32 strains of lactic acid bacteria were isolated, these showed similar phenotypic characteristics, but these had a different response at the level of pH (4,4;9,4) and NaCl (6,5%). The sensory evaluation will be an important complement in this type of study.
