Vitamin D is a mineral vitamin supplement, whose function is related to bone health, also responsible for other activities, regulates growth, immune system, cardiovascular, muscles, metabolism and insulin, maintaining the proper concentrations of calcium and phosphorus in the body. When combined with other micronutrients, vitamin D becomes fat-soluble, acquired through food and sunlight. The main diseases caused by lack of vitamin D were evaluated, noting that excessive consumption can cause serious problems, such as obesity, already lacking malnutrition. From the studies analyzed, it can be concluded that vitamin D bioavailability is associated with regulation and maintenance for a healthy life. This study exposes the need for maintenance of vitamins for maintenance, presenting the importance of supplementation for people over 65 years and pregnant women.
The female sex has a greater search for sweets, this can be affected by several factors, in this research follow-up the present work aimed to survey and compare sensory attributes of gourmet brigadeiros produced with skimmed and whole milk condensed milk among male tasters and female. For the formulation of gourmet brigadeiros, skimmed and whole milk condensed milk and cocoa powder were used, so the gourmet brigadeiros were elaborated through the aid of the microwave oven, where the cooking process that takes place by means of electromagnetic waves lasted 5 minutes. In the first sensory analysis attributes (network method) were raised based on the quantitative descriptive analysis of (CATA Check-All-That-Apply) and aimed to raise attributes among the sensory profiles of appearance, aroma, flavor and texture, followed by the second sensory analysis, the continuation being the Quantitative Descriptive Analysis, in which a form with the attributes most commented by the tasters was given. The sensory analysis data were computed by the computer program R. using Cochran's Q tests and correspondence analysis. For the Cochran Q test, the p-value at 5% significance was stipulated, which provided the results of only four significant attributes and the graph of the correspondence analysis that allowed the view on the male sex to stand out more than the female sex. Thus, only four attributes showed a difference, which are appearance (soft), aroma (acid), flavor (acid) and texture (hard) and when comparing the gourmet brigadeiros of whole milk consumed by tasters of both sexes and gourmet brigadeiro of skimmed milk consumed by tasters of both sexes, it was found that there is greater dispersion of men with greater variability in the perception of attributes.
Coconut oil is obtained from the pulp of fresh ripe coconut and can be extracted in different ways; either by artisanal, solvent or mechanical extraction. Unlike other vegetable oils, this one has a high content of medium chain fatty acids, which represent around 60% of its composition. This high content of medium chain fatty acids results in several benefits for the human organism. The present study aimed to evaluate the impacts caused by the daily consumption of coconut oil on the reduction of the abdominal circumference of men and women and on weight loss, its antibacterial activity against Staphylococcus aureus and, finally, its influence on the prevention and development of Alzheimer's. Most of the fatty acids present in coconut oil are rapidly absorbed in the intestine, generating energy quickly, even without suffering the action of pancreatic lipase enzymes. From the bibliographic review carried out, the effectiveness of coconut oil in reducing the abdominal circumference of men and women and weight loss was considered, in addition to its antibacterial activity against Staphylococcus aureus and its influence of coconut oil on prevention and development Alzheimer's disease. However, it was considered viable to consume up to 12 grams of coconut oil daily, and can be used as a substitute for other oils of vegetable origin.
