O objetivo do trabalho foi elaborar uma cerveja com aroma e sabor da fruta amazônica cupuaçu, além de ser diferenciada em cor com corante natural da pitaya-rosa. Foram produzidos 20L da cerveja Fruit Wheat Beer com cupuaçu e pitaya. A cerveja foi avaliada quanto aos parâmetros físico-químicos durante sua produção. Após elaboração a cerveja foi avaliada quanto ao pH, cor, turbidez, densidade original, densidade aparente, teor alcoólico em % v/v e % p/v. A qualidade sensorial foi avaliada por sommeliers de cervejas. O extrato de pitaya apresentou elevada umidade e a polpa de cupuaço baixo pH e elevada acidez. Ao longo da fermentação houve decréscimo na densidade de 1,051 para 1,013 e a fermentação durou 168 h. A cerveja apresentou pH de 4,06, cor de 8,2 EBC, turbidez de 2,07 e teor alcoólico final de 5,4 %v/v. A impressão geral foi de uma cerveja com coloração rosa intensa, espuma rosada, aroma e sabor de cupuaçu, levemente ácida e amargor baixo. Com isso, concluiu-se que o cupuaçu conferiu aroma e sabor à cerveja, além de contribuir com demais parâmetros de qualidade. A pitaya teve grande participação na cerveja contribuindo com sua coloração rosa intensa. Os frutos se mostraram favoráveis a produção de cerveja.
