RESUMO -Objetivou-se com a execução deste trabalho avaliar, em nível de campo, o desempenho zootécnico de girinos de rã-touro (Rana catesbeiana) criados em ranários comerciais que utilizam o sistema anfigranja, e simultaneamente estimar os valores de consumo diário de ração para compor uma tabela de referência para a alimentação dos animais. Os resultados encontrados nas unidades de observações monitoradas (aproximadamente 249 mil animais) atingiram os seguintes índices médios: a mortalidade (em %) variou de: 0,7 a 35,2 (média 5,9%); o ganho de peso (g. p/dia): de 0,03 a 0,22 (média 0,11 g/dia); e a conversão alimentar: de 0,92 a 2,75 : 1; (média 1,50 : 1). Comparados com dados preliminares, tais resultados indicam uma significativa otimização dos índices zootécnicos, demonstrando que houve um relativo ganho de produtividade com o aperfeiçoamento das técnicas de manejo implementadas. A redução do valor médio da conversão alimentar aparente foi provocada principalmente pelo adequado uso da tabela de referência, cujos valores foram ratificados durante o trabalho de monitoramento das unidades. Tal tabela possibilita o cálculo da quantidade de alimento a ser oferecido diariamente, baseado nos peso médio dos girinos e na estimativa do percentual de consumo, para temperatura da água entre 18 a 29 graus centígrados, (girinos de 0,1 a 26 gramas de peso médio).Palavras-chave: criação de girinos; índices zootécnicos; rã-touro; ranicultura; Sistema Anfigranja; tabela de alimentação. Performance of Bullfrog Tadpoles (Rana catesbeiana) Raised in the "Amphifarm" System and Feeding TablesABSTRACT -The objective of this work was to evaluate (under field conditions), the performance of bullfrog tadpoles (Rana catesbeiana) raised on commercial frog farms using the "Amphifarm" Systems, and, at the same time, to estimate daily food intake, in order to obtain a reference table for feeding the animals. The results found on the observation units (approximately 249 mil animals) showed the following indexes: mortality(%): range from 0.7 to 35.2, the average being 5.9; weight gain (g/day) varied from 0.03 to 0.22, the average being 0.11; feed conversion ranged from 0.92 to 2.75:1, the average being 1.50:1. Compared to previous data, these results indicate a significant improvement in performance indexes, showing that there was a relative gain in productivity due to the improvement of management techniques. The reduction in average feed conversion was caused mostly by adequate use of the reference table, the values of which were confirmed during a follow-up of the observation units. This table allows the calculation of daily food offer, based on tadpole average weight and on estimated intake as a percentage of body weight, for water temperatures varying from 18 to 29 C and body weight ranging from 0.1 to 26 g.

As avaliações demonstraram haver valores de produtividade com grandes variações, de acordo com a capacidade do produtor em assimilar a tecnologia e principalmente manejar os animais de forma padronizada, para atingir o ponto de equilíbrio no fluxo de produção de seu plantel. Os resultados encontrados nas unidades de observação monitoradas (aproximadamente 250 mil animais) atingiram os seguintes índices médios: a mortalidade (em %) 0,5 a 39,5 (média geral 12,0); o ganho de peso (g./dia) 0,4 a 2,5 (média geral 1,2); e a conversão alimentar 0,9 a 2,5 : 1,0 (média geral 1,4 : 1,0). Objetivou-se avaliar o efeito do sexo e do uso de quatro rações comerciais extrusadas (R1, R2, R3 e R4) e uma ração peletizada (R5) sobre o rendimento de carcaça e aproveitamento de subprodutos da ranicultura, após 56 dias de experimentação. As rações comerciais eram recomendadas para diferentes espécies e fases de desenvolvimento animal, a saber: R1 = para rãs (na fase inicial, imagos); R2 = para peixes onívoros (em fase inicial); R3 = para trutas (peixe carnívoro na fase de crescimento); e R4 = para trutas (na fase inicial). Foram analisados os teores (%) de matéria seca (MS), proteína bruta (PB), extrato etéreo (EE), fibra bruta (FB) e matéria mineral (MM) das rações. Foram utilizadas 80 rãs-touro com peso médio inicial de 51,57g distribuídas em um delineamento em blocos casualizados em esquema fatorial (cinco rações X dois sexos) com oito repetições de uma rã por unidade experimental. Não houve significância na interação entre os fatores para todas as variáveis analisadas. Os menores valores de rendimento de carcaça foram observados nos animais que receberam a ração R3, sendo as demais iguais. No aproveitamento de subprodutos, destacou-se a ração R1, que proporcionou maior peso de fígado e descartes, e a ração R4, com maior peso de fígado e corpo gorduroso. O sexo dos animais apenas influenciou no aproveitamento de descartes, sendo que os machos proporcionaram maiores médias.
RESUMO -Este trabalho foi realizado com o objetivo de avaliar quatro densidades de estocagem na recria de rã-touro em mini-baias. As densidades estudadas foram: D1: 75 rãs/m² (inicial) e 35 rãs/m² (final); D2: 105 rãs/m² (inicial) e 50 rãs/m² (final); D3: 125 rãs/m² (inicial) e 60 rãs/m² (final); e D4: 160 rãs/m² (inicial) e 75 rãs/m² (final). No ensaio de desempenho, foram utilizadas 558 rãs com peso médio de 26,80 g durante 56 dias, distribuídas em um delineamento em blocos casualizados, com seis repetições. Houve efeito das densidades sobre o ganho de peso, que foram inversamente proporcionais. Menores densidades resultaram em maior consumo de alimento, de modo que, com o uso das densidades iniciais de 75 e 105 rãs/m², obteve-se maior consumo de alimento que o uso de 125 e 160 rãs/m². A conversão alimentar aparente também variou; a densidade inicial de 160 rãs/m² proporcionou a pior média desse parâmetro. Os tratamentos foram avaliados economicamente, segundo os custos com alimentação, a receita bruta e a receita líquida parcial proporcionados. Concluiu-se que a densidade final de 50 rãs/m² aumentou a receita líquida parcial, proporcionando resultados mais adequados para produção de rãs.Palavras-chave: avaliação econômica, pós-metamorfose, ranicultura Effects of Stocking Density on Performance of Bullfrog (Rana catesbeiana) in thePost-metamorphic Phase RESUMO -This work was carried out with the objective of evaluate four stocking densities of bullfrog (post-metamorphic) in mini-stalls. The densities studied were D1: 75 bullfrogs/m² (initial) and 35 bullfrogs/m² (finishing); D2: 105 bullfrogs/m² (initial) and 50 bullfrogs/m² (finishing); D3: 125 bullfrogs/m² (initial) and 60 bullfrogs/m² (finishing); and D4: 160 bullfrogs/m² (initial) and 75 bullfrogs/m² (finishing). The performance trial was carried out with 558 bullfrogs averaging initial weight of 26.80 g, during 56 days, according to a completely randomized blocks design with six replicates. Inversely proportional effects of densities on weight gain were observed. Smaller densities resulted in greater values of feed intake, and the initial densities of 75 and 105 bullfrogs/m² resulted in higher values of feed intake than 125 and 160 bullfrogs/m². The apparent feed conversion also varied , showing the worst average on initial density of 160 bullfrogs/m². Economic analysis was performed with the costs with feeding, gross income and partial net income. It was concluded that the final density of 50 bullfrogs/m² increased the partial net income and was indicated for production of bullfrogs.
This study produced fish mortadella from Mechanically Separated Meat (MSM) of Nile tilapia added with animal fat. Three formulations were developed: M1 (MSM - 89 % and 5 % pork fat), M2 (MSM - 84 % and 10 % pork fat) and M3 (MSM - 79 % and 15 % pork fat). The elaborated products were tested for technological, physical, physico-chemical, microbiological and sensory parameters. The results showed that the fish mortadella were microbiologically stable with a particular texture for an emulsified meat product, attractive colour and characteristic flavour. All formulations met the expected identity and quality requirements. They also achieved good acceptance by the judges, in which formulation M1 may be highlighted for presenting an emulsion stability of 97 %, higher protein content (18.09 %) and lower lipids (16.31 %). In addition, it also reached higher mean scores for texture attributes and purchase intent. Therefore, it is possible to prepare fish mortadellas from tilapia MSM using less animal fat.
