Devido à ampla comprovação entre a relação alimento e saúde, a população de um modo geral tem se tornado cada vez mais consciente com a importância de uma alimentação saudável. Diante deste cenário o interesse por produtos alimentícios saudáveis, nutritivos e de grande aproveitamento tem crescido mundialmente, resultando em estudos na área de produtos lácteos, destacando os iogurtes. A pitaia (fruta exótica de potencial sensorial e pouco explorada), quinoa (cereal de elevado teor protéico e conteúdos significativos de ácidos graxos) e a sucralose (edulcorante sem restrições de uso são ingredientes) são ingredientes que adicionados em conjunto tornam o produto com alto potencial econômico. Nesse sentido, o presente estudo objetivou a caracterização química, física e nutricional de iorgurte acrescido de polpa de pitaia. Os resultados obtidos foram: pH (4,99), sólidos solúveis totais (14,4°Brix), acidez 0,8% em g de ácido láctico, teor de água (78,88%), proteínas (5%), fibras alimentares (1,88%), cinzas (1,31%), carboidratos (10,55%), lipídeos (2,38%). O produto atendeu todos os critérios da legislação brasileira vigente para leites fermentados. Além disso, constitui um produto passível a alegação funcional prebiótica, devido a seu alto teor de fibras alimentares (1,88 ± 0,14%) presentes na porção do alimento.
-Broccoli is a vegetable usually consumed by the population as a source of bioactive compounds such as carotenoids and tocopherols. However, the broccoli processing mainly uses the flowers, remaining the leaves and stalks as by-products. This work used dried broccoli leaves powder to enrich fresh pasta, and compared its sensory and technological characteristics with pasta enriched with spinach powder. The levels of lutein and β-carotene in broccoli flower and leaves were also quantified. Lutein and β-carotene analysis on broccoli leaves showed, 2.512 mg/100 g and 1.554 mg/100 g respectively. Regarding to the technological characteristics, broccoli pasta showed better results for cooking loss (6.36 %) and water uptake (183.9 %) when compared to the spinach one. The broccoli and spinach pasta showed overall acceptance of 74.4 % and 81.1 %, respectively, higher than 70 %, that is the minimum required for the indication of the product to the market test.
RESUMO -A utilização de subprodutos de vegetais é de grande importância devido as suas propriedades funcionais, tecnológicas e nutricionais, além de proteção ao meio ambiente e redução de custos para as indústrias. Este estudo teve como objetivo avaliar a qualidade da farinha de abóbora, obtida de seus subprodutos, como fonte de compostos bioativos. Os subprodutos de abóbora (cascas, aparas e sementes), obtidos da indústria de vegetais minimamente processados foram submetidos a secagem com o objetivo de obter-se uma farinha vegetal. A análise de antioxidantes da farinha obtida foi realizada pelo método DPPH (2,2-difenil-1-picrilhidrazilo) e os valores foram expressos em gramas de farinha / 100 gramas de DPPH. O perfil de carotenoides foi determinado em HPLC e os resultados foram expressos em mg de carotenoide / 100g de farinha. Como resultado da análise de antioxidantes, 173,61g de farinha de abóbora são necessárias para inibir 100g de DPPH. Com a análise do perfil de carotenoides foram detectados picos de luteína (2,52 mg), zeaxantina (0,57 mg), alfa-caroteno (0,28 mg) e, destacando-se, beta-caroteno (4,81 mg), com valores expressos para 100g de farinha de abóbora. Através dos resultados obtidos é possível observar que os resíduos de abóbora podem ser utilizados como ingredientes na indústria, com o intuito de agregar compostos bioativos em produtos alimentícios.
