RESUMOO leite bovino é o fluido secretado pelas glândulas mamárias da fêmea, com principal função de servir como alimento exclusivo para recém-nascidos por suprir suas demandas nutricionais, sendo um alimento de grande importância para alimentação humana devido a sua composição físico-química e nutricional. Entretanto, devido a estes fatores, o leite é considerado um meio de cultura favorável para o desenvolvimento de microrganismos contaminantes que pode afetar a qualidade físico-química e microbiológica desta matriz alimentícia. Tendo em vista que a pecuária leiteira no interior do estado de Sergipe, com destaque para a cidade de Nossa Senhora da Glória, representa importante papel social e econômico para o estado, esta pesquisa teve como objetivo a quantificação dos parâmetros microbiológica (Contagem Padrão em Placas, coliformes termotolerantes, Salmonella sp., e Contagem de Célula Somática) e a qualidade físicoquímica ( gordura, proteína, lactose, acidez titulável, pH, extrato seco desengordurado, densidade, temperatura e estabilidade ao alizarol 72%) no leite cru refrigerado proveniente de quatro propriedades rurais, com base em agricultura familiar, da região de Nossa Senhora da Glória, SE, em relação às exigências dos padroes microbiologicos e fisico-químicos estabelecidos pela Instrução Normativa Nº 76/2018 e a Instrução Normativa N° 77/2018, ambas do Ministério da Agricultura Pecuária e Abastecimento (MAPA). Os dados obtidos foram analisados por descrição quantitativa e comparados os as exigências dos parâmentros da legislação vigente no Brasil. The territory of Alto Sertão plays a role of extreme social and economic importance for Sergipe, as it is an important region that produces milk and its derivatives, with emphasis on artisanal Coalho cheese. However, when this food is not obtained under adequate conditions of Good Manufacturing Practices (GMP), undesirable microorganisms may multiply, which may reflect negatively on the product's final quality, in addition to possible risks to the consumer's health. In this context, this study aimed to diagnose GMPs in establishments producing artisanal coalho cheese in Alto Sertão Sergipano. First, a survey was carried out in partnership with the municipal secretaries of Agriculture of possible cheese factories in the cities of Alto Sertão Sergipano, being chosen five establishments in four cities with the most representative in the production of artisanal Coalho cheese from Alto Sertão Sergipano (Canindé do São Francisco, Gararu, Monte Alegre and Nossa Senhora da Glória). Then, a checklist adapted from ANVISA, 2002, was applied in person, totaling 20 establishments producing artisanal coalho cheese. From the results obtained, it was possible to verify that most cheese factories, regardless of the city surveyed, were not in compliance with the recommendations recommended by current legislation, especially concerning the hygienic and sanitary conditions of the facilities, transport of raw materials, storage of the cheese and lack of training and technical assistance, in addition to failures or absence of GMP. De acordo com a Lei Estadual Nº 8.523 DE 29 de abril de 2019, é considerado, dentre outros atributos, como queijo de coalho artesanal, o produzido em Sergipe, a partir do leite fresco e cru de bovinos e bubalinos, que apresente consistência firme, cor e sabor próprios, massa uniforme, isenta de corantes e conservantes, com ou sem olhaduras mecânicas (SERGIPE, 2019). Em Sergipe, a cidade de Nossa Senhora da Gloria, se destaca como o maior polo leiteiro do estado. Segundo Cavalcante (2005) estimase que, cerca de 40% a 50% da produção de leite neste município, seja destinado à produção de queijo coalho artesanal. Neste contexto, este trabalho teve como objetivo, caracterizar os parâmetros microbiológicos de queijo coalho artesanal produzido em Nossa Senhora da Glória (SE), maior polo leiteiro de Sergipe. A metodologia aplicada foi desenvolvida a partir de seis (6) amostras de queijo coalho artesanal de diferentes fabricantes da região, onde foram efetuadas análises microbiológicas para a quantificação de Salmonella sp, Staphylococcus aureus coagulase positiva, coliformes termotolerantes e Listeria monocytogenes. Importante ressaltar, que foram incluídos nesta pesquisa somente amostras de queijo coalho artesanal sem registro de inspeção (federal, estadual e/ou municipal) e que não apresentaram alterações em suas características sensoriais e macroscópicas. Após a quantificação microbiana os resultados obtidos foram comparados com os parâmetros estabelecidos pela I.N N°60, de 2019 (MAPA). Os resultados obtidos das análises demostraram que todas as amostras de queijo coalho artesanal analisadas (100%), apresentaram valores superiores de S. aureus coagulase positiva e de coliformes termotolerantes com o estabelecido pela legislação vigente. Com relação a Salmonella sp foi possível constatar que 33,33% das amostras analisadas estavam fora do padrão exigido pela Instrução
