Bu çalışmada Şanlıurfa yöresine özgü "Tırnaklı (düz) Ekmek"te bazı katkı maddelerinin kullanımının ekmek kalitesine etkileri araştırılmıştır. Bu amaçla, buğday ununa %10, 20, 30 oranlarında durum buğday unu (A), %0.3, 0.6, 0.9 oranlarında DATEM (monogliseridlerin diasetil tartarik asit esterleri) (B) ve 25, 50, 75 mg/kg C vitamini (C) katılarak tırnaklı ekmek üretilmiş ve ekmekler 48 saat süreyle depolanmıştır. Çalışmada, katkılı unlarda farinograf ve ekstensograf özellikler ile depolamanın 1. 24. ve 48. saatlerinde ekmeklerde nem ve duyusal özellikler belirlenmiştir. Elde edilen sonuçlara göre, katkıların farinografta su absorbsiyonu, stabilite süresi, yumuşama derecesi ve yoğurma tolerans sayısı üzerine etkisi önemli (p<0.05) bulunurken, gelişme süresi üzerine etkisi önemsiz (p>0.05) bulunmuştur. Oran artışına bağlı olarak katkıların askorbik asit hariç ekstensografta maksimum direnci artırdığı gözlenmiştir. Tüm depolama saatlerinde katkı kullanılarak üretilen ekmekler kontrole göre daha yüksek nem değerine sahip olmuştur. Depolama süresi boyunca tüm katkılı ekmeklerin tekstür ve tat-aroma puanları azalmıştır. For this purpose, tırnaklı ekmek was produced by adding 10, 20, 30% durum wheat flour (A), 0.3, 0.6, 0.9% DATEM (diacetyl tartaric acid esters of monoglycerides) (B), and 25, 50, 75 mg/kg vitamin C (C) to wheat flour and the breads were stored for 48 hours. In the study, the farinograph and extensograph properties of mixed flours, and the moisture and sensory properties of breads were determined at 1st, 24th and 48th hours of storage. According to the results, the effects of using additives on water absorption, stability time, mixing tolerans index and softening degree were significant (p<0.05), but not significant (p>0.05) on the development time. Results of extensographic measurements show that increasing levels of all additives improved the maximum resistance against extensograph, except for the ascorbic acid. At every stage of the storage, mixed breads had higher moisture values than the control. During of storage period, the texture and taste-aroma scores of all the breads with additive addition decreased.
This study aims to investigate the possible usages of terebinth as a functional additive in noodle formulation. For this purpose, raw terebinth and roasted terebinth in different temperatures (100 °C, 125 °C, 150 °C, 175 °C and 200 °C) were added to the formulation at rates of 0%, 10%, 20% and 30% to produce noodles. According to the results of this study, the use of terebinth in the noodle formulation decreased the amount of phytic acid in the noodles while it significantly increased the amount of ash, protein, fat, total dietary fiber, total phenolic content and antioxidant (p < 0.05). In the sensory analysis, the highest score in the context of general acceptances was obtained from the sample B1 which 10% terebinth roasted at 100 °C while the lowest score belonged to the sample F3 which 30% terebinth roasted at 200 °C was added.
In this study, the suitability of broccoli which cultivated within the scope of Southeastern Anatolia Project for canning was aimed. For this purpose, the effects of different boiling liquids and storage time on broccoli canned foods were investigated. Marathon and Sultan broccoli varieties were used as plant materials. The broccolis were boiled in cooking liquid including 0.1% (w/v) citric acid, 1.7% (w/v) salt and 0.1% (w/v) citric acid + 1.7% (w/v) salt. As the filling liquid, a solution containing 0.1% (w/v) citric acid and 1.7% (w/v) salt was used. The filled glass jars were autoclaved at 116°C for 25 minutes. The canned broccolis were stored at room temperature for 9 months and taken into analyses with 3 months increments. According to the results obtained, it was concluded that sterilization caused the formation of a soft texture in broccoli, throughout storage. However, the values of drained weight, net weight, ratio of drained weight to net weight, top space of jars as well as the rate of filling did not change significantly as statistically. During the storage, the rate of ascorbic acid has decreased. As a result of the sensory evaluation, both varieties were preferred by panelists.
Bu çalışma yağışa dayalı koşullarda farklı durum buğday çeşitlerinin adaptasyon kabiliyetini belirlemek amacıyla Mardin/Midyat ilçesi 2018-2019 kış yetiştirme sezonunda tesadüf blokları deneme desenine göre 4 tekrarlamalı olarak yürütülmüştür. Çalışmada, Güneydoğu Anadolu Bölgesine özgü 4 yerel (Bağacak, Sorgül, Menceki, Havrani) ve farklı şirketlerden temin edilen 4 ticari çeşit (Cesara, Svevo, Burgos ve Ovidio) durum buğdayı çeşidi kullanılmıştır. Araştırmada; başaklanma süresi (gün), bitki boyu (cm), başakta başakcık sayısı (adet), başakta tane ağırlığı (g), bin tane ağırlığı (g), tane verimi (kg/da), hektolitre ağırlığı (kg/hl), yaş gluten (%w/w), protein oranı (%) ve SDS Sedimantasyon (ml) özellikleri incelenmiştir. Araştırma sonuçlarına göre çeşitlerin ekolojik şartlardan önemli derecede etkilendikleri, başaklanma süresi 128.00-141.00 gün, bitki boyu 71.75-117.00 cm, başakta başakcık sayısı 18.15-22.13 adet, başakta tane ağırlığı 1.19-1.63 g, bin tane ağırlığı 26.52-37.96 g, tane verimi 133.50-198.75 kg/da, hektolitre ağırlığı 67.40-72.20 kg/hl, yaş gluten %16.20-34.35 ve protein oranı %15.85-19.40 ve sedimentasyon değeri 15.50-25.00 ml arasında değişmiştir. Yağışa dayalı şartlarda yerel ve ticari makarnalık (durum) buğday çeşitlerinin verim ve kalitesi üzerine önemli etkisinin olduğu görülmüştür.
In this study, the effect of germinated wheat flour on the quality of tırnaklı bread and pan bread was investigated. Tırnaklı bread is a flat bread specific to the Şanlıurfa region and pan bread is a bread that raises with expanded volume. In this research, Dariel bread wheat variety was used. The standard wheat flour commonly used in bread was replaced by flour from germinated milled wheat at 20, 40, 60, 80, and 100% incorporation ratios. Within the scope of the study, 1000 kernel weight, test weight and falling number analysis were made in germinated wheat. Analysis was performed on tırnaklı and the pan breads. Results indicated that there was a decrease on values of 1000 kernel weight, test weight and the falling number at germinated wheat flour. Most sensory features decreased in quality when germinated wheat flour was used, with the exception of bread softness and taste-aroma in tırnaklı breads, and crumb color and taste-aroma in the pan breads. However, this effect was more limited in tırnaklı bread than other pan breads.

Farklı oranlarda mısır unu ilavesi ile keklerin nem, kül, yağ, toplam besinsel lif, toplam fenolik madde, antioksidan ve fitik asit içeriklerinin arttığı, protein içeriğinin düştüğü tespit edilmiştir. Kek örneklerinde mısır unu ilave oranlarının artması; kek hacmi, hacim indeksi, simetri indeksi ve pişme kaybı değerlerinin belirgin düzeyde azalmasına, kek yoğunluğunun ise artmasına neden olmuştur. Mısır unu ilavesi, keklerin esneklik ve iç yapışkanlık hariç diğer tüm tekstürel değerlerinde düşüşe neden olurken L* ve b* renk değerlerinde artışa neden olmuştur. Duyusal analizler sonucunda genel kabul edilebilirlik açısından en çok beğeniyi %40 mısır unu ilaveli kek örneği alırken en az beğeniyi kontrol örneği almıştır.
