The aim of the study was to determine the content of macrominerals and microminerals in the longissimus lumborum (LL) and semitendinosus (ST) muscles of young bulls of five breeds—Polish Red (PR), White-Backed (WB), Polish Black-and-White (PBW), Simmental (SIM) and Polish Holstein-Friesian (PHF). The meat of the Polish Holstein-Friesian bulls was found to contain significantly less K, Mg and Ca and more Mn than other breeds. The meat of the White-Backed bulls contained significantly (P < 0.01) more Ca and less Na than the meat of the Polish Red, Simmental and Polish Holstein-Friesian breeds. Moreover, the meat of White-Backed bulls showed a significantly (P < 0.01) higher level of Mn and Cu in comparison with other native breeds (Polish Red and Polish Black-and-White) and the Simmental breed. Similar content of macronutrients was found in the LL and ST muscles. However, in the case of micronutrients, the LL muscle contained significantly more Zn, Fe and Cu as well as Mn (P > 0.05).
Based on the analysis of the proximate composition, mineral contents and fatty acid profi les, the objective of this study was to evaluate the nutritional value of the traditional product Carp Ham produced from common carp raw fi llets. Signifi cant differences were found in the proximate composition and mineral contents between the raw fi llets and the fi nal product. The contents of protein, fat and ash in 100 g of the traditional product Among the fatty acids, the only signifi cant differences were stated for C20:1n-9 (2.22 vs. 1.76%) and C22:6n-3 (1.34 vs. 0.83%), with the higher values determined for fi llets. The traditional product, Carp Ham, preserved positive nutritional features, which were better highlighted by the fatty acid composition, health-related indices and oxidative stability. The study indicated that the traditional manufacturing method retains the most part of the nutritional constituents present in the carp fi llets.
WARTOŚĆ UŻYTKOWA I JAKOŚĆ FILETÓW RYB KARPIOWATYCH (CYPRINIDAE) UTRZYMYWANYCH W POLIKULTURZES t r e s z c z e n i e Celem pracy było porównanie wartości użytkowej i jakości filetów trzech gatunków ryb karpiowatych: karpia zwyczajnego (Cyprinus carpio L.), amura białego (Ctenopharyngodon iddela Val.) i tołpygi pstrej (Aristichtys nobilis Rich.), utrzymywanych w polikulturze. Ryby pozyskano ze stawów rybackich w woj. lubelskim. Analizowano wymiary morfometryczne, masę i udział elementów ciała, właściwości fizykochemiczne (pH, przewodność elektryczną właściwą, barwę) oraz chemiczne mięsa (woda, związki mineralne jako popiół, białko, tłuszcz, wybrane makro-i mikroelementy, TBARS), jak również wartość kaloryczną i wskaźnik INQ. Ryby trzech ocenianych gatunków o zbliżonej masie ciała (ok. 1000 g) różniły się istotnie (p ≤ 0,05) wymiarami (długością, wysokością i szerokością), nie różniły się natomiast masą tuszy i filetu. Największy udział tuszy i filetu (p ≤ 0,05) stwierdzono w przypadku amura białego (odpowiednio: 66,5 i 48,8 %). Filet karpia zwyczajnego 24 h post mortem wykazywał istotnie (p ≤ 0,05) najniższe pH (6,69) i najwyższą przewodność elektryczną (91,88 mS·cm -1 ) oraz był najjaśniejszy (najwyższe L* = 55,51), w porównaniu z filetami tołpygi pstrej (odpowiednio: pH 24 = 7,31, EC 24 = 2,10 mS·cm -1 , L* = 52,58) i amura białego (odpowiednio: pH 24 = 7,08, EC 24 = 1,33 mS·cm -1 , L* = 54,86). W tkance mięśniowej amura białego zmierzono najmniejszą wartość parametru b* (-1,09). Filet tołpygi pstrej zawierał istotnie (p ≤ 0,01) najwięcej tłuszczu (9,60 %) o najwyższym INQ (1,45), ale jednocześnie wykazywał najmniejszą stabilność oksydacyjną lipidów (najwyższy TBARS = 0,43 mg MDA kg -1 tkanki mięśniowej), w porównaniu z filetami karpia zwyczajnego i amura białego. the material for the study consisted of 80 samples taken from the longissimus lumborum (ll) and semitendinosus (ST) muscles of young bulls of five breeds (8 samples of each muscle per breed), including three native breeds included in the genetic resources conservation programme, i.e. Polish red, White-backed and Polish black-and-White, which together with the simmental and Polish Holstein-Friesian breeds. The content of the elements (K, Na, Mg, Ca, Zn, Fe, Mn, and Cu) analysed in the meat of the young bulls (fattened in a semi-intensive system on fodder from permanent grassland) was found to depend (in varying degrees) on the breed of cattle. The greatest differences (P<0.01 and P<0.05) were noted between the Polish Holstein-Friesians (PHF) and the remaining breeds, mainly in the content of Mg, Ca, Zn and Mn. The results obtained in the four other breeds for most of the macro-and microelements were more uniform, with the highest content noted in the muscles of the young bulls of the native breeds.
Ryby oraz przetwory rybne są ważnym elementem zbilansowanej diety człowieka. Pomimo wysokiej wartości odżywczej mogą być one jednak źródłem metali ciężkich.Celem badań było określenie wpływu gatunku i środowiska życia na zawartość ołowiu w tkance mię-śniowej ryb oraz oszacowanie pobrania tego pierwiastka ze 100 g mięsa, uwzględniając najniższe dawki wyznaczone (Benchmark Dose Lower Confidence Limit -BMDL) dla dzieci i dorosłych.Badaniami objęto sześć gatunków ryb żyjących w różnym środowisku: ryby morskie -śledź i dorsz, ryby słodkowodne dzikie -płoć i okoń oraz ryby z akwakultury -pstrąg tęczowy i karp. Zawartość oło-wiu oznaczono metodą bezpłomieniowej atomowej spektrometrii absorpcyjnej z wykorzystaniem spektrometru SpectrAA 880Z (Varian).
