ResumoEm benefício da saúde dos indivíduos, o consumo de sódio per capita deve ser restringido. Para isso é importante, também, que os clientes de unidades de alimentação e nutrição (UAN) conheçam o que de fato têm em seus pratos, para que possam fazer suas opções. Objetivo: A pesquisa pretendeu descrever a oferta de sódio oriunda de alimentos industrializados em restaurantes institucionais no estado de São Paulo, tendo em perspectiva a sugestão da Organização Mundial da Saúde (OMS), de consumo diário inferior a 5g de cloreto de sódio, ou seja, 2g de sódio. Método: A partir dos documentos de controle de estoque de cada UAN, foram coletadas informações a respeito de produtos industrializados utilizados no período de 30 dias. A quantidade de sódio apurada foi resultante da multiplicação da informação contida nos rótulos dos alimentos industrializados por sua quantidade utilizada para a elaboração das preparações oferecidas em almoços. A partir dessa informação e do número de refeições servidas, foi apurada a quantidade média de sódio oferecida por esses produtos a cada cliente, por dia. A média foi comparada à sugestão da OMS. Resultados: O teor de sódio contido nos alimentos industrializados utilizados nas preparações fornecidas pelas UANs, na média, é muito maior do que o estimado para uma refeição-almoço, atingindo até o nível 2,5 vezes o valor recomendado pela OMS. Conclusão: Dado que todas as unidades avaliadas apresentaram resultados semelhantes, fazse necessária a revisão das técnicas de preparo utilizadas na UAN, com revisão dos ingredientes usados nas preparações.

ABSTRACTAims: To assess whether mild vitamin B12 deficiency induces depression prior to the development of anemia, and whether vitamin B12 supplementation can act as a preventive measure against depression in young rats. Methods: Wistar rats were divided into control group (n=11) and B12 group (n=10). The B12 group received vitamin B12 supplementation in drinking water throughout the study. In Phase 1, all animals received a pectin-supplemented diet (50g/kg) for six weeks to induce vitamin B12 depletion. After that, the Porsolt test was applied for induction and evaluation of depressive state and blood was collected for a complete blood count. In Phase 2, which lasted two weeks, pectin was removed from the diet and the same tests were applied again at the end. Results: In both phases, erythrocyte count, hematocrit level, and hemoglobin concentration were normal, i.e., the rats did not develop anemia.
For the benefit of the people, sodium intake should be restricted. It is important that clients Units Food and Nutrition (UAN) know what comen.La intent of this research was to teach the impact of sodium in industrialized products offered by uans, using as reference the suggestion of World Health Organization (WHO ) daily consumption of less than 5g of sodium chloride. For this they were used documents stock control each UAN, information of industrialized products used in thirty days you were collected. The amount of sodium was filtered result of the multiplication of information on food labels for the amount used in preparing lunches. Based on this and on the number of meals served, the average amount of sodium was filtered. It was found that the average sodium content in the foods used in high és more prepared than 700mg estimates for a lunch given the suggestion of WHO and distribution of total energy value (TEV) daily, which estimates lunch is about 35% of VET. The result of the unit “1” was equal to 1.583,69mg; the unidade “2” was equal to 970,68mg; unit “3” was equal to 1.075,05mg and unity “4” was equal to 1.769,21mg. Sauces, condiments and processed meats destacáranse units as some constituents of the high value of sodium in processed products. Sobresalióse also use softener meat, gelatin and potato fry. Following the successful model applied by other countries, reducing the sodium content of processed products, success is achieved from the consciousness of business managers food and the Brazilian government.
