Brazil has a vast biodiversity of food matrices, sources that can be used for the extraction of various biomolecules that can help supplement products, act as food coloring, or even assist in industrial processes. Thus, the present study focuses on approaching traditional and emerging ways for extracting compounds, as well as deepening the foundations of the various techniques already used by the scientific literature for purification of the obtained extracts.
