Çalışmada şeflerin, gastronomi eğitimi alan öğrencilerin niteliklerine ilişkin görüşlerinin tespit edilmesi amaçlanmaktadır. Araştırmada nitel yaklaşım çerçevesinde veri toplama tekniği olarak yarı yapılandırılmış görüşme; veri analizi olarak da içerik analizinden yararlanılmıştır. Bu bağlamda 30 Nisan-7 Mayıs 2017 tarihlerinde Bolu Mengen'de düzenlenen III. Ulusal Aşçılık Kampı'nda eğitim veren 7 aşçıbaşı ve aşçıbaşı yardımcısı ile görüşmeler gerçekleştirilmiştir. Şeflerin tamamının erkek, lise ve lisans mezunu olduğu ve çalışma sürelerinin de 9 ile 21 yıl arasında değiştiği tespit edilmiştir. Elde edilen bulgular neticesinde şeflerin görüşlerinin iki adet ana kategori ile sekiz alt kategoriden meydana geldiği görülmektedir. Bireysel nitelikler ana kategorisinde çalışma disiplini, ekip çalışması ve mesleki ilgi alt kategorileri yer almaktadır. Gıda güvenliği, hijyen ve sanitasyon, ekipman ve ekipman kullanımı bilgisi, ürün bilgisi ve pişirme, hazırlama ve sunum teknik ve yöntemleri alt kategorileri de mesleki nitelikler ana kategorisini oluşturmaktadır. Çalışmada öğrencilerin teorik bilgisinin üst düzeyde olduğu ancak uygulama yeterliliğinin ise kısıtlı olduğu da saptanmıştır.
This paper analysis was conducted to determine job satisfaction levels and problems of the instructors employed in gastronomy programs of the universities. The research was structured through qualitative research methods. The research population was constituted with the instructors teaching in gastronomy departments in Turkey and a purposeful sampling strategy was used to determine the research sample. Interview forms were used to collect data and resultant data were subjected to content analysis with the aid of NVIVO software. Kappa analysis was executed to test the data reliability. Present findings revealed that participants were mostly satisfied with the departments or programs, but experienced various problems at work place. Insufficient academic staff, improper curriculums, insufficient budgets, equipment and material supply and poor university-private sector cooperation were indicated as the primary problems experienced by the culinary instructors. The findings cannot be generalized to a larger population because the study is conducted with a case study approach.
