The aim of this study was to develop a nutrient‐enhanced millet‐based composite flour incorporating skimmed milk powder and vegetables for children aged 6–59 months. Two processing methods were tested to optimize nutrient content and quality of millet‐based composite flour, namely germination for 0, 24 and 48 hr and roasting at 80, 100, and 140°C. The amount of ingredients in the formulation was determined using Nutri‐survey software. Germinating millet grains for 48 hr at room temperature significantly (p < 0.05) increased protein content (9.3%–10.6%), protein digestibility (22.3%–65.5%), and total sugars (2.2%–5.5%), while phytate content (3.9–3.7 mg/g) decreased significantly (p < 0.05). Roasting millet grains at 140°C significantly (p < 0.05) increased the protein digestibility (22.3%–60.1%) and reduced protein (9.3%–7.8%), phytate (3.9–3.6 mg/g), and total sugar content (2.2%–1.9%). Germinating millet grains at room temperature for 48 hr resulted in millet flour with the best nutritional quality and was adopted for the production of millet‐based composite flour. Addition of vegetables and skimmed milk powder to germinated millet flour significantly (p < 0.05) increased the macro‐ and micronutrient contents and the functional properties of millet‐based composite flour. The study demonstrated that the use of skimmed milk powder and vegetables greatly improves the protein quality and micronutrient profile of millet‐based complementary foods. The product has the potential to make a significant contribution to the improvement of nutrition of children in developing countries.

Low access to appropriate complementary diets, sex of child, food insecurity, poor socioeconomic status, and low knowledge about stunting were the main predictors of childhood stunting in the study population.

BACKGROUND: During production and handling, maize is attacked by many Fusarium species, some of which are prolific producers of fumonisins. Contamination of maize with fumonisins is influenced by climate, agronomic and postharvest practices. This study investigated the factors associated with the occurrence of fumonisins in maize produced in three agroecological zones of Uganda.

Despite the agreed global and national stunting reduction targets, Uganda has made very little progress. Understanding context-specific risk factors for stunted growth is therefore pertinent to designing programs to address the problem.A cross-sectional study was conducted in 32 randomly selected villages in Buhweju district, Southwest Uganda. Data entry, cleaning and analysis were carried out using Statistical Package for Social Sciences (SPSS) version 21. A regression analysis was conducted to examine the associations between potential risk factors and stunted growth.The survey covered 256 households and anthropometric measurements were taken for 221 children aged 6-59 months. The majority of the households (66%) in the district were food insecure and had a low socioeconomic status (84%). The prevalence of stunting in Buhweju district was 51%, which is significantly higher than the regional and national averages. Only 28% of the children were exclusively breastfed in the first 6 months of life, and only 10% of them received the minimum acceptable diet (MAD).The findings of this study demonstrate that reductions in stunted growth at national or regional levels has not necessarily translated into similar trends in rural areas of Uganda. The notable contributors to stunting in these areas include morbidity, sub-optimal infant and young child feeding (IYCF) practices, low consumption of animalsource foods, food insecurity, lack of access to high-quality drinking water, sanitation and hygiene (WASH) facilities and poverty. Increased investment in both nutrition specific and sensitive interventions is therefore crucial to address these risk factors.

High postharvest losses in developing countries negate the efforts geared towards improving food security. Poor produce quality including high prevalence of mycotoxin contamination is another significant problem. Appropriate postharvest handling and processing provide opportunities to reduce postharvest losses and improve food safety. This study was aimed at establishing the postharvest handling practices and estimating qualitative and quantitative postharvest losses for maize, millet, sorghum, beans, groundnuts, cassava, and sweet potatoes among farmers in 3 districts (Kamuli, Apac and Nakasongola) in Uganda, representing different agro-ecological zones. The study was done in late August 2014 after the first season harvests (June-August). Farmer interviews, focus group discussions and key informant interviews were used to collect data on postharvest loss estimates and postharvest handling practices. Samples of the different foods were collected and analyzed for physical quality characteristics, mould count and aflatoxin contamination using standard laboratory procedures. The results show predominance of rudimentary and inappropriate postharvest handling methods. Postharvest loss estimates were generally high, with values of 41%, 33%, 33%, 26%, 31%, 22%, 17% and 19% for maize, millet, sorghum, beans, groundnuts, cowpea, sweet potatoes and cassava respectively. The highest loss for all the crops was recorded at storage. Prevalence of aflatoxin contamination was 44%, 91%, 55%, 36%, 35% and 60% for maize, sorghum, groundnuts, millet, sweet potatoes and cassava respectively. Sorghum, maize and groundnuts were found to have the highest aflatoxin contamination levels. Chi-square test (p = 0.024, odds ratio = 5) showed that grain dried on bare ground had higher aflatoxin levels than that dried on a covered surface.
