The article highlights the current state of the production of dairy and vegetable food products. The results of studies of organoleptic and physical, chemical indicators of the quality of various herbal drinks: coconut, almond and oat, are presented, as well as an analysis and comparison with cow's milk, which is used in hotel and restaurant complexes in Bela Tserkva. For assessing the quality according to the organoleptic characteristics of the beverages, the following were examined: appearance, color, smell, taste and consistency. It was found that according to these indicators, herbal drinks comply with the regulatory documentation for these products. When assessing the quality by physical and chemical indicators, the mass fraction of fat, dry matter, titratable and active acidity, and density were established. The titratable acidity of milk-like drinks was within the normal range and did not exceed 10 ⁰T. The mass fraction of fat in coconut milk was 1.2 %, almond-rice milk – 1.3 % and oat milk – 2.4 %. Mass fraction of coconut milk solids was 7.6%, almond-rice 10.5% and oat milk 11.4%. The density of all types of herbal drinks was in the range of 1005–1015 kg/m3. The indicators of the quality of cow's milk, which is used in hotel and restaurant complexes, have been investigated in a comparative form. In terms of organoleptic indicators, the quality of cow's milk corresponds to the normative documentation. The fat mass fraction of cow's milk was 2.5 %, the mass fraction of solids was 12.5%, the titratable acidity was at the level of 18 ⁰T, the active acidity pH was 6.6, and the density was 1028 kg/m3. Analysis of various types of vegetable and cow's milk, which are used in hotel and restaurant complexes in the city of Bela Tserkva, in terms of physicochemical and organoleptic quality indicators, allows us to consider herbal drinks as substitutes for traditional products capable of providing the human body with essential nutritional factors.
Knowledge of the peculiarities of technological processes for the production of cow's milk analogues, optimal parameters for production, the chemical composition of raw materials and the resulting finished product, in particular the amino acid composition, plays an essential role in the development of new types of functional products, improvement of their stability, taste, and nutritional properties, and allows them to be enriched with additional components through various modifications. The purpose of the study is to compare the amino acid composition and balance of amino acids of various types of beverages based on plant raw materials: almond, rice and coconut, oatmeal with respect to the amino acid composition of cow's milk protein. The following methods were used: capillary electrophoresis – to determine the amino acid composition of the protein in analogues of milk and cow's milk, mathematical – to calculate the amino acid score and utility coefficient. The composition, organoleptic quality indicators, main technological stages, and safety of production of plant-based analogues of animal milk are presented. Three types of plant-based beverages were used for the study: almond with a mass fraction of fat of 1.5%; oatmeal with a mass fraction of fat of 2.5%; rice and coconut with a mass fraction of fat of 1.8%; and cow's milk with a mass fraction of fat of 2.5%. A comparative estimate of the mass fraction of amino acids valine, isoleucine, leucine, lysine, methionine, threonine, and phenylalanine in the protein of beverages based on plant raw materials is presented relative to the mass fraction of amino acids in the milk protein, and the reference protein. The limiting amino acid in the protein composition of the studied analogues of cow's milk is methionine. The highest amino acid protein scores were observed in oatmeal drink; however, they did not exceed those of pasteurised milk. To assess the balance of the amino acid composition, the utility coefficient was determined. The findings are of practical importance, because they can be used in the production of functional products, in particular, analogues of cow's milk, to improve the composition, increase biological value, and enrichment with nutrients and additional components
The article discusses modern trends in growing and processing technologies for industrial hemp grown in Ukraine. The analysis of the normative and technical documentation governing the use of industrial hemp products in the food industry has been carried out. A comparative analysis of the fatty acid composition of various types of oil, including hemp oil, has been carried out. The special value of hemp oil for humans has been shown due to the content of polyunsaturated fatty acids and fat-soluble vitamins. Hemp oil is a rich and balanced source of linoleic (Omega-6), alpha-linolenic (Omega-3) fatty acids. The effects of these two polyunsaturated fatty acids on human health are anti-inflammatory, antithrombotic, antiarrhythmic and hypolipidemic properties. Hemp oil also contains significant amounts of tocopherols, which exhibit antioxidant activity. Ukrainian breeders have developed highly productive hemp varieties YUSO 31, Glyana, Victoria, Zoryana, Nika with a tetrahydrocannabinol content close to zero. The use of hemp seeds in the food industry is limited by poor performance in some functional indicators, therefore, a comparative analysis of processing methods developed to improve these properties was carried out. Typically, industrial hemp seeds are treated as a waste product and are used in most cases as animal feed. As a direct ingredient or food additive, hemp seeds, which are gluten-free, have only been used in recent years. In addition, the technology of manufacturing food products containing hemp raw materials is described. The article aims to summarize the chemical composition, nutritional value and potential health benefits of hemp seeds from in vitro and in vivo studies.
