Abstrak. Pengeringan kopra dapat dilakukan dengan sumber energi surya dan dapat juga dilakukan dengan sumber energi buatan ataupun kombinasi antara kedua energi. Variasi sumber energi pengeringan antara sumber energi surya dengan sumber panas energi biomassa dalam alat pengering diduga dapat berpengaruh pada kualitas kopra dan minyak kelapa yang dihasilkan. Penelitian ini bertujuan untuk mengetahui pengaruh variasi sumber energi pengeringan terhadap kualitas kopra dan minyak kelapa yang dihasilkan. Pengeringan kopra dengan sumber energi surya dilakukan siang hari (pukul 08.00 WIB sampai 17.00 WIB), sedangkan pengeringan dengan sumber energi energi biomassa dilakukan malam hari (pukul 20.00 WIB sampai 06.00 WIB), pengeringan dilakukan setiap hari dan dihentikan apabila kopra yang dikeringkan mencapai kadar air 5%. Hasil penelitian menunjukkan bahwa suhu rata rata ruang pengering sumber panas energi biomassa lebih tinggi 55 OC dibandingkan energi surya 49 OC. Sumber panas energi biomassa mampu mengeringkan kopra dalam waktu 12 jam dengan kadar air akhir sebesar 4,17 % berlangsung lebih cepat dari pada sumber energi surya dalam waktu 13 jam dengan kadar air akhir 4,13 %. Sedangkan warna kopra pengeringan energi surya terlihat lebih putih dibandingkan dengan warna kopra hasil pengeringan sumber panas energi biomassa. Rendemen minyak kelapa pengeringan energi surya berjumlah 38% lebih banyak dibandingakan dengan energi biomassa hanya 36%. Kualitas minyak kelapa ditentukan oleh asam lemak bebas, warna dan aroma. Asam lemak bebas minyak kelapa pengeringan energi surya sebanyak 1,1% sedangkan asam lemak bebas minyak kelapa pengering energi biomassa sebanyak 1,2%. Uji organoleptik dilakukan dengan melihat warna dan aroma minyak kelapa. Hasil uji organoleptik dengan mengambil sampel panelis dengan 30 orang ibu rumah tangga sanggat suka dengan hasil pengeringan energi surya.Study of Copra and Coconut Oil Quality in the Drying ProcessWith Variations in Energy Sources.Abstract. The drying process of copra can be done by using solar energy sources, artificial energy sources, or a combination of both. The difference between the drying process by using a solar energy source and the biomass furnace heat source in the dryer device can be expected to affect the quality of copra and coconut oil produced. This study is aimed at determining the effect of different drying energy sources on the quality of copra and palm oil produced. The copra drying process by using solar energy source was done during the day (8.00 am – 5.00 pm) while the drying process by using biomass stove energy source was done during the night (8.00 pm – 6.00 am). The drying process was continuously done every day and was stopped when the dried copra reached 5% of moisture content. The results show the average temperature of the dryer room of the biomass furnace heat source is higher at 55 OC than the solar energy 49 OC. The drying process by using the biomass furnace heat source which done within 12 hours with 4.17 % of final moisture content, was progressing faster than using the solar energy source which done within 13 hours with 4.13 % of final water content. Besides, the color of the copra of a process using solar energy looks brighter than the result of the drying process using a biomass furnace heat source. Moreover, the yield of coconut oil from the drying process using solar energy is 38 %, higher than from the biomass furnace drying process which only 36 %. The quality of coconut oil is determined by free – fatty acid, color, and aroma. Coconut oil from the drying process using solar energy contains 1,1 % free fatty acid, while the process using biomass furnace content 1,2 % free fatty acid. The organoleptic test was done by looking at the color and aroma of coconut oil. The samples of the test were 30 housewives and the results show they prefer the solar energy drying process’s results.Keywords: Copra and Coconut Oil, Solar Energy, Biomass Energy.
