Neste trabalho estudou-se a influência das variáveis independentes: temperatura e velocidade do ar de secagem sobre as variáveis de respostas: rendimento e eficiência do processo de secagem por atomização do suco de abóbora. Para o melhor estudo do processo escolheu-se o método do planejamento experimental fatorial completo 2 2 , com 3 pontos centrais avaliado pela metodologia de superfície de resposta. As temperaturas utilizadas foram 60, 70 e 80 °C e as velocidades do ar foram 2, 2,5 e 3,0 m/s. Para a análise estatística do planejamento experimental utilizou-se o programa statística 7.0. os valores do rendimento e da eficiência do processo variaram de 16,21 a 34,83 % e 16,18 a 34,81 %, respectivamente. Os pontos centrais para as duas variáveis dependentes estudadas apresentaram uma variação pequena, indicando uma boa repetibilidade do processo. Os efeitos principais da temperatura e da velocidade do ar foram significativos, enquanto que o da interação não foi significativo. A velocidade do ar apresentou maior influência, em relação à temperatura, sobre as variáveis de resposta estudadas. Após a análise das respostas, concluiu-se que a condição otimizada do processo pode ser obtida utilizando o menor nível da temperatura (60 °C) e o maior da velocidade do ar (3 m/s).
