The indicators of recent years demonstrate stability and high results in milk production at agricultural enterprises. The relevance is confirmed by the fact that milk production and its optimization are key aspects of the economic development of the agricultural sector of Ukraine in the post-war period, because dairy farming is a system-forming branch of agriculture that opens up new opportunities for the formation of promising business development vectors. The purpose of the article is to analyse the problems and prospects of economic aspects of the efficiency of resource use and optimization of milk production in agricultural enterprises of Ukraine in the post-war period. The research used the following methods: induction and deduction, synthesis, theoretical generalization, statistical analysis, comparative analysis, modelling. The links of inconsistency between resources, production of dairy products and the capabilities of enterprises, state policy, the level, and norms of consumption of milk and dairy products by the population in the post-war period are studied. Accordingly, the dynamics of production, export, sales, stages of production, peculiarities of cooperation and import of basic dairy products were considered. A direct connection between the production and consumption of milk, the dependence of the demand and consumption of milk and dairy products on the level of total income of households has been established. Based on this, the work presents a full description of the dairy industry in Ukraine, the volume of milk production in the pre-war period and prospects for development in the post-war period. A systematic study of the market properties of various types of dairy products of Ukraine using SWOT and PEST analysis is given in general. In order to improve the state of the market of milk and dairy products of Ukraine, appropriate proposals have been formulated. The practical value of the work lies in the fact that its results can be used as a basis for the development of technologies for the use of milk production resources in the post-war period, as well as in the work of specialists in the agro-industrial and economic sectors

Modern global instability caused by economic, social and natural factors, which requires a deep understanding and analysis of the impact of such conditions on the formation of demand and supply in the agricultural sector. The relevance of the study is determined by the acute nature of the extraordinary challenges faced by the agricultural sector of Ukraine. In connection with the instability of the economic and political situation, agricultural markets become the object of increased influence of external factors, such as military conflicts, economic sanctions and changes in climatic conditions. Taking into account the dynamism of the market and the search for optimal answers to challenges makes this topic important for the scientific community and practical participants of the agricultural sector. The purpose of the research is to conduct a detailed scientific and practical substantiation of the peculiarities of the formation of demand and supply in the agricultural markets of Ukraine in conditions of extraordinary challenges. The research used general scientific (generalization, comparison, induction and deduction) and empirical-theoretical methods (analysis, synthesis). The use of system- structural and statistical analysis made it possible to analyze the Ukrainian agricultural market and allowed to determine changes in consumer demand for the main groups of products, taking into account economic, social and geopolitical factors. It was found out that the subject of purchase and sale on the agrarian market is agricultural products, the characteristics and peculiarities of production of which determine the uniqueness of the agrarian market in comparison with other types of markets. It has been established that the population's food needs are fully met, and as a result, the country has the opportunity to export products. On the basis of the obtained results, it was established that as a result of a significant increase in food prices, a possible reduction in the assortment of these products and a loss of stable income among the population, it was found that they will lead to a shift in the balance of consumption in favor of bakery products and semi-finished products, which is caused by a decrease in the consumption of livestock products, fish and seasonal products. The results of the study can be used to develop an effective policy of state regulation aimed at increasing the competitiveness of agricultural markets, and can also be used for the further development of risk management programs and strategies in the agricultural sector.
Продовольча безпека перебуває під постійним наглядом провідних світових організацій, вимагає впровадження дієвих заходів і механізмів, що адаптовані до викликів сьогодення (кліматичні зміни, пандемія COVID-19, війна на території України). Метою статті є дослідження впливу війни в Україні на продовольчу безпеку на національному та глобальному рівні задля визначення напрямів їх покращення. Накопичення невирішених структурних і організаційних питань в аграрному секторі на тлі повномасштабного військового вторгнення країни-агресора в Україну спричинило значне зниження національної продовольчої безпеки, що на тлі продовження війни у 2023 р. може призвести до: зниження виробництва пшениці на 21 %; зменшення урожаю інших зернових культур на 15,8 %; падіння експортують мінімум на 33,3 %. Наразі на функціонування національних продовольчих систем негативно впливають: зрив посівних кампаній через активні бойові дії на сільськогосподарських територіях або їх замінування; порушення логістики та всіх елементів ланцюгів постачання продукції; руйнування активів та інфраструктури агропродовольчої системи; порушення діяльності зі створення доданої вартості; ускладнення експорту української зернової продукції на зовнішні ринки, реалізація сільськогосподарської продукції як в межах країни так і в інші країни світу. Задля покращення продовольчої безпеки на національному та глобальному рівні необхідно забезпечити не тільки остаточне припинення війни, а й відбудову національного агропромислового виробництва з урахуванням: його відновлення на територіях, що постраждали від бойових дій; децентралізації аграрної економіки; міцної власної продовольчої системи громад; цілісності агропромислового комплексу та міцної національної продовольчої системи; державної підтримки аграрного сектору економіки; розвитку сільських населених пунктів; репозиціонування України в глобальній продовольчій системі; сталий розвиток сільськогосподарського виробництва з використанням біоенергетичний потенціалу аграрного сектору.
