White Vegetables: A Forgotten Source of Nutrients: Purdue Roundtable Executive Summary

Abstract: Purdue University convened a scientific roundtable, “White Vegetables: A Forgotten Source of Nutrients,” in Chicago, IL, June 18–19, 2012, to bring together experts to address the contributions of white vegetables, including potatoes, as sources of key nutrients and other microconstituents within a dietary pattern supporting health and wellness. This paper summarizes the meeting and supplement papers, including discussion among participants. The group of researchers identified areas of ambiguity regarding clas… Show more

“…As was expected, by replacing sodium with potassium, both the gravimetric and the molar ratios of K:Na increased significantly (P<0.05). As it could be observed from Table 3, the use of salt replacer in T2 and T3 samples efficiently increased the molar K:Na ratio of cream cheese to about 1.2; a value that corresponds to current nutritive recommendations for potassium and sodium molar ratios of 1.2 or 1.8 (Weaver, 2013). cream cheese.…”

“…). Potatoes are an affordable food option and are unique amongst vegetables in that they are a carbohydrate‐rich food, but also provide beneficial fats (MUFA and PUFA), and are particularly noted for their contribution of key nutrients such as fiber and potassium (Freedman and Keast ; Weaver and Marr ). Despite the potential benefits associated with consumption of nutrients found in potatoes, the role of potatoes in a healthy diet is controversial (King and Slavin ; Ouhtit et al.…”
