Whey proteins hydrolysis using Alcalase and Flavourzyme

Abstract: One of the ways to solve the problem of whey utilization is to obtain enzymatic hydrolysates with bioactive properties and reduced antigenicity. A wide range of enzyme preparations are used for whey hydrolysis.
