Volatile Profile, Pigment Content, and In Vitro Radical Scavenging Activity of Flower, Thyme, and Fir Honeys Produced in Hellas

Abstract: The philosophy of the present work was to investigate the volatile profile, pigment content, and in vitro radical scavenging activity of Hellenic honeys, using aqueous honey solutions.
