“…For flour fortification, vitamin D in liquid form is spray‐dried and added as a powder to flour or baking premixes . Clinical trials in Finland, Romania, and Iran provide solid evidence of bioavailability and efficacy of vitamin D from fortified bread . Many studies using vitamin D–fortified wheat or maize flour in LMICs support the use of these foods as a vehicle for increasing vitamin D intake.…”

“…Four studies were conducted in participants with type 2 diabetes (13-15, 18) and 1 in women only (17). Four studies used dairy products (13,15,(17)(18) as a food source and bread was used in one experiment (14). The daily dose of vitamin D3, 1000 and 2000 IU, and the duration of administration ranged from 8 to 12 weeks.…”

“…Interestingly, a cohort study revealed that circulating concentrations of 25(OH)D, the main biomarker of vitamin D status, below 50 nmol/L was related to new onset obesity in adults (4). Nevertheless, despite some clinical trials showing the fat massdecreasing and anti-inflammatory effects of supplementary vitamin D in adults (5,6,7), actually the relationship between vitamin D deficiency and obesity is still like a "chicken and egg story" (8).…”
