Visualizing 3D Food Microstructure Using Tomographic Methods: Advantages and Disadvantages

Abstract: X-ray micro-computed tomography (micro-CT) provides the unique ability to capture intact internal microstructure data without significant preparation of the sample. The fundamentals of micro-CT technology are briefly described along with a short introduction to basic image processing, quantitative analysis, and derivative computational modeling. The applications and limitations of micro-CT in industries such as meat, dairy, postharvest, and bread/confectionary are discussed to serve as a guideline to the plaus… Show more

“…[20,127] Although informative, disadvantages such as expensive software and equipment, and a limited capacity to image low density materials without additional processing (e.g., MicroFil injection) can limit its utility in a given workflow. [128] Unlike microCT, mercury porosimetry is not affected by scaffold density. The porous material of interest is placed in a mercury intrusion chamber, a sealed vessel that is incrementally pressurized by adding mercury until a maximum pressure is reached.…”

“…MRI could provide visual information of internal morphological organization and molecular distribution in fish [76]. As shown in Figure 3b, red represents a high proton density and blue represents a low proton density in the pesudo-color images.…”

“…Several bakery products are porous. Therefore, the knowledge about the microscopic structure gives insight about the mechanical and textural differences in different bakery recipes [ 31 ]. Micro-CT technology has previously been shown to be a useful method to study the porous network and the porosity of freeze died salmon and their relation to phase transitions during frozen storage [ 32 ].…”
