Vinegar production from <i>Theobroma grandiflorum</i> SCHUM (cupuassu)

Abstract: <abstract> <p>The tropical fruit cupuassu comes from <italic>Theobroma grandiflorum</italic> (SCHUM), a close relative of cocoa. Cupuassu has a rich yet delicate flavour profile with notes of chocolate, pineapple, passion fruit and other fruits.
