“…Being aware of the studies demonstrating toxic effects of rutabaga seeds and roots on thyroid gland function, but nevertheless supporting the idea of introducing rutabaga sprouts as a new functional food, we paid careful attention to assessing the product‐related risk. This aspect of food control for rutabaga has never been investigated before, so the results of our experiment may at least partially answer the question concerning safety of the tested products, related to the content of likely present antinutritive compounds, especially progoitrin and erucic acid, whose consumption was previously associated with myocardial lipidosis and heart lesions in animals . Finally, our study covers discussion on growth time and light availability influence on the concentration of beneficial and harmful substances in rutabaga sprouts; the conclusions may be of interest for sprout producers.…”
