Variability of Fresh Pork Belly Quality Evaluation Results Depends on Measurement Locations

Abstract: The increase in pork demand has led to an especially high increase in demand for precisely quality-defined bellies. The aim of the study was to determine the influence of quality measurement location on the pork belly on the results of qualitative evaluation and then to recommend the main measurement locations required to determine the precise quality evaluation of the whole cut. The research material consisted of 92 fresh pork belly samples, each divided on 12 testing locations. The highest pH values were not… Show more

“…It can be considered that such assessment is consistent with the consumer assessment of belly thickness because it is likely that consumers discriminate against products of excessive fatness [ 63 ]. Pork bellies are highly important and preferable primal cuts by consumers, the consumption of which has been rising in different countries [ 64 , 65 , 66 ]. However, the fact that one of the most important meat choice criteria for consumers is lean meat [ 67 , 68 ] apparently could have influenced such a rating of bellies that was the opposite of the loin rating.…”

“…LD— Longissimus dorsi , LL— Longissimus lumborum and SEM— Semimembranosus muscles have been evaluated most often, whereas muscles from the abdominal location have been subjected to evaluation much less frequently. However, due to the increasing commercial value of the belly, this is an element that should be taken into particular account [ 7 ]. The meat industry is interested in all the muscles but especially those included in the most valuable cuts [ 8 ].…”
