Utilization of Jackfruit (Artocarpus heterophyllus) Seed’s Flour in Food Processing: A Review

Abstract: Although jackfruit (Artocarpus heterophyllus) seeds have significant food value, these are underutilized by both human and animals due to lack of information about nutrient contents and its effective use in food formulations. This review article aimed to highlight the information regarding physicochemical properties, nutrient contents and prospective use of jackfruit seeds flour in food formulations. Various research results on preparation of food products like bread, cake and noodles by supplementing j… Show more

“…The b* value also significantly increased with increased pasta enrichment. Hasan et al (2010) reported that biscuits prepared from 50% JFSF showed desirable light brown color while biscuits made up of 80% seed flour exhibited dark color. Similar results have been reported by (Babiker et al 2020;Veena et al 2015).…”

“…The Pharma Innovation Journal https://www.thepharmajournal.com However, they are not used to their full potential due to the lack of knowledge about the seeds' nutritional and food production potential. Jackfruit seeds are valuable by-products that account for more than 15% of the total weight of the fruit (Akter and Huque 2018) [2] . As a result, the goal of this study was to explore if the jackfruit seed could be used to make a bread spread that was healthy, inexpensive, and acceptable in terms of consistency, texture, scent, and flavour.…”

“…In most research, Artocarpus heterophyllus species are believed to originate from the Western Ghats of India, a region known as the foremost producer (Mandave et al, 2018), and cultivation outreach has now stretched to several tropical regions and countries, such as Bangladesh, Burma, Malaysia, Indonesia, Uganda, Thailand, Brazil, and Australia (Fine, 2021;Rao, 2023). In regions such as Bangladesh, jackfruit seeds are integral to traditional cuisines, offering unique flavors to dishes and serving as a base for stews and curries, prompting explorations into value addition and export potential (Akter and Haque, 2018). Similarly, Brazilian researchers have identified innovative uses such as fermenting, roasting, and grinding seeds into flour, offering an alternative to cocoa with economic benefits for farmers (Suzihaque et al, 2022).…”
