Two cases of food additive-induced severe liver damage associated with positive results on lymphocyte stimulation test and for antinuclear antibodies

Abstract: Two cases of severe liver injury and positive result for antinuclear antibodies induced by food additives are reported. The first patient reported long-term intake of Mabo Ramen(®) noodle soup, nutritional supplements, and over-the-counter drugs. Total bilirubin, aspartate aminotransferase, and alanine aminotransferase were 9.6 mg/dL, 1,048, and 1,574 IU/L, respectively. Antinuclear antibody was 80×. The drug-induced lymphocyte stimulation test (DLST) was positive for Mabo Ramen(®) and its additives such as Xa… Show more

“…DILI is often responsible for boxed warnings, drug nonapproval or drug withdrawal, even in acute liver failure (ALF) (20). Many drugs cause hepatotoxicity, including over-the-counter (OTC) drugs (21), herbs and dietary supplements (22)(23)(24). The symptoms of DILI range from mildly elevated liver enzymes to severe hepatic damage like ALF.…”

“…Generally, the liver, which acts as an immune tolerant organ, is tolerant to food antigens. However, prolonged exposure to antigens leads to the imbalance of the gut–liver axis, which in turn activates the liver immune response and ultimately causes liver damage [ 7 , 8 , 9 ]. Oxidative stress plays an indispensable part in food allergy-induced liver damage accompanied by the reduction in SOD activity, dropped GSH level, and the increasing levels of malondialdehyde (MDA) and nitric oxide (NO) [ 10 ].…”
